The Milk Preparation Specialist will be responsible for controlling consistent quality of milk and cream produced by completing the following tasks when necessary: working with Milk Receivers and supervisors regarding quality and composition of milk supply along with controlling and monitoring standardization of Cheese milk and production of cream to meet specifications. This includes but is not limited to full time hours as Milk preparation as well as handling Milk Receiver positions when necessary.
10 hour shifts 4 days a week, rotating shifts with 5 day weekend every three weeks!
Hours: Split Shifts - 2 days of afternoons and 2 days of midnights
Essential Duties & Responsibility
We will train you to do the following with great efficiency:
· Monitor and control the quality of incoming milk for seasonal changes that may cause the need for adjustment in the cheese making process.
· Take instruction from Cheese Makers and adjust Vat Milk composition to maintain recipe specifications.
· Communicate necessary information to Cheese Makers and Evaporator personnel: Flow rate, Milk Separator adjustments, silo change needs, clarifier usage, end filling, CIP times, breakdowns, etc.
· Control standardization of raw milk
· Complete all manual sanitation items for the Raw area and CIP areas. (Hygiene Plan)
· Verify performance of vat compositions vs recipe targets.
· Receive and Document incoming ingredients: Culture, rennet, calcium and color. Keep the ingredient room stocked.
