What are the responsibilities and job description for the Milk Preparation position at Guggisberg Cheese, Inc?
The SC Cheese Maker will be responsible for controlling consistent quality of cheese produced by completing the following tasks when necessary: working with Milk preparation personnel regarding quality and composition of milk supply along with controlling and monitoring recipe parameters from the vat deck to the brine. This includes but is not limited to full time hours on the vat deck as well as handling Lead Operator and Operator positions when necessary. The main objective of the position is to optimize production quantities and quality, control product losses, and increase the competitiveness of the Guggisberg company brand.
Responsibilities:
· Actively participates in the department’s Quality program, both in development and implementation of policies and procedures that produce compliance with SQF, FDA, USDA and any relevant governing authority’s regulations
· Check the quality of incoming milk for seasonal changes that may cause the need for adjustment in the cheese making process.
· Check and Adjust Vat Milk composition to maintain recipe specifications.
· Monitor and control sanitary conditions of equipment, environment, and personnel through visual inspection, trending results, and Internal Audit scores.
· Communicate necessary information to Milk Preparation and Evaporator personnel: Flow rate, Milk Separator adjustments, silo change needs, clarifier usage, end filling, CIP times, breakdowns, etc.
· Verify Proper Clean-in-Place (CIP) completion of all Chalon Megard processing equipment.
· Complete sampling of vats and VMS for micro trending before, during, and end of production. (Control Plan)

· Complete time sensitive tasks of each vat to maintain recipe timing and emptying for proper moisture control.
· Follow CIP Cleaning plan and all equipment availability during your shift: vats, VMS, Milk line
· Complete all manual sanitation items for the vat deck and VMS at the end of production. (Hygiene Plan)
· Oversee continuous operation of the production line: need for molds are met, prepress and presses are available.
Cover any employee shift within the department when necessary.
Minimum Qualifications:
· Intermediate Experience and knowledge of cow’s milk cheese production
· Basic skill level in Excel, Word and other Microsoft products;
· Excellent technical ability and aptitude
· Ability to read, interpret, apply critical thinking and problem solving to complex situations and develop solutions to urgent problems
· Excellent time management skills
· Ability to work collaboratively and cooperatively with a diverse population
· Ability to learn, apply, and hold others accountable to regulations and rules, and demonstrate an unwavering adherence to quality and safety
