Job Summary: Lead the overall production of all pastry and bakery products. Set-up of dessert buffet stations and a la carte dining menus. Responsible for maintaining high cleanliness, organization and sanitary levels in the pastry shop.
Essential Duties and Responsibilities include the following, but are not limited to:
- Prepare all pastry and bakery items.
- Work dessert buffet stations and banquet plate ups when necessary.
- Follow recipes, leads in the development of new recipes.
- Develop prep lists and follow prep lists.
- Plan weekly production based on banquet orders and reservations.
- Ensure all products are fresh before serving.
- Ensure the pastry coolers are maintained, neat, organized and items are rotated.
- Ensure all work areas are safe and secure; report any unsafe conditions to the supervisor.
- Prepare all ordering for the pastry department.
