What are the responsibilities and job description for the Broiler Chef position at Hemlock?
Key Responsibilities:
- Operate and maintain the broiler station, ensuring high-quality grilling and broiling of meats, seafood, and vegetables.
- Cook proteins to exact temperature specifications, ensuring consistency and guest satisfaction.
- Monitor grill temperatures, meat resting times, and plating presentations.
- Work closely with the Executive Chef and Sous Chef to ensure proper portioning, seasoning, and execution of all broiled dishes.
- Follow proper food handling and sanitation procedures in compliance with health and safety regulations.
- Maintain an organized and clean broiler station, ensuring all tools and ingredients are properly stocked.
- Coordinate with other kitchen staff to ensure smooth service, especially during peak hours.
- Inspect and calibrate cooking equipment to maintain optimal performance.
- Assist in training new team members on broiling techniques and station setup.
Qualifications:
- Preferred experience with an Infrared Broiler as a Broiler Cook in a fine dining or high-end steakhouse setting.
- Expertise in cooking various cuts of steak to different doneness levels with consistency.
- Strong understanding of grilling techniques, seasoning, and meat quality.
- Ability to work in a high-pressure environment while maintaining precision and efficiency.
- Excellent knife skills and understanding of kitchen safety protocols.
- Team-oriented mindset with excellent communication skills.
- Availability to work evenings, weekends, and holidays as needed.
Physical Requirements:
- Ability to stand for long periods and work in a high-heat environment.
- Ability to lift up to 50 lbs as needed.
- Manual dexterity to handle kitchen tools and equipment efficiently.
