Hilo Yacht Club – Utility Cook
You will follow the direction and instruction of Head and Sous Chefs, with the goal of helping create the finest dishes in Hawaii. Our team is focused on member and personal satisfaction.
Creativity, collaboration, and teamwork define the kitchen at Hilo Yacht Club. The Selected applicant will become an integral part of our dynamic and growing private club with a 100-year history of fine dining directly on the water of Ka’umealani Bay just outside Hilo town. As a Hilo Yacht Club employee, you will be responsible for helping create a warm and welcoming environment for our members. You will have a keen eye for details, organization, and cleanliness, with an ability to assist in the creation of food that will bring happiness, fulfillment, and joy into the lives of our members and their special guests.
As a Utility Cook, you must have the ability to be a floater in our kitchen, able to move between the various stations with ease and helping where needed. Attitude will be crucial to your success with us. We will train you for success if you have a willingness to learn and grow.
Hilo Yacht Club takes great pride in being one of the oldest continually operating private clubs in Hawaii. Our Kitchen team associates are trained to maintain the highest creative culinary standards, with the preparation and precision of our menu offerings second to none.
In this position, you will be primarily working with the weekend team, but additional hours and days may be added as your skills grow. There is room for advancement for the right applicant.

Areas of Key Accountability:
- Perform prep activities and have your station ready when service begins.
- Properly store and label ingredients to keep them fresh and reduce food wastage.
- Check food plating, temperature, and portions for all dishes you are responsible for.
- Monitor stock and inform the supervisor of needed supplies as required.
- Maintain a clean station at all times and follow all Hawaii Health Department
Guidelines.
- Report to work on time and in uniform.
- Ensure all food items leaving your station are of the highest quality possible, following all guidelines and plating styles set by the Head and Sous Chef.
- Foster a cooperative working climate, maximizing productivity, and employee morale. We are here to create and have fun with a professional and Aloha based worth ethic.
- At the end of the shift, clean your entire station, including reach-ins, shelves, and tables. All unused food must be returned to the walk-in and stored in the proper area. Work with the kitchen team on keeping walk in clean and organized.
- You will bring curiosity and joy of learning to the HYC kitchen.
- You will strive for members and personal satisfaction. You must be happy with the food you create. Your creative input will be welcome.
- You will strive to accommodate member requests in every case, if possible. If you cannot meet a member’s request, you will be required to state why in writing and submit to the General Manager, in a text at the time of the request, regardless of the day or time. All denied member food-related requests will be reviewed and discussed.
Other Duties and Responsibilities:
- Uphold all HYC standards as outlined in the employee handbook.
- Upholds grooming and hygiene standards.
- Ensures proper use and care of equipment.
- Accepts temporary assignments and or assists in other areas as needed.

Depending on the time of year, kitchen temperatures may be high.

HYC food costing, member satisfaction, and quality goals; attendance; work quality; completion of assigned tasks, reports, duties; maintenance of positive, team-building attitude; and courteous professional demeanor with other managers and the HYC Board of Trustees.

Pay: $17.00 - $21.00 per hour
COVID-19 considerations:
At Hilo Yacht Club, we take your health and the wellbeing of our members seriously. You will wear proper PPE (we supply) and submit to a daily temperature check and weekly COVID questionnaire.
