What are the responsibilities and job description for the Head Chef position at Holiday Home Camp?
Position Title: Head Chef
Type of Employment: Seasonal Summer (May 28 - August 7). Opportunity to extend before or after stated dates.
Position Description: As a Camp Chef, you will be responsible for managing all aspects of kitchen operations, including overseeing the kitchen staff, ordering food, and ensuring efficient meal service. Your role will involve budgeting, planning, and preparing large quantities of food for campers and staff. You will also be responsible for creating a unique menu that takes special diets and dietary restrictions into consideration. Additionally, you will need to monitor food inventory and prepare dishes that are within budget. As the Camp Chef, you will manage the kitchen and maintain accurate meal records, while also ensuring that all health department food-safety regulations and DPI standards are followed.
Reports To: Camp Director
Desired Qualifications:
- Minimum of eight continuous weeks experience in camp kitchen or other institutional type of kitchen/food service
- Prior supervisory experience in food service related field
- Working knowledge of Wisconsin State and Federal Codes and Laws as they apply to: Food handling, food serving standards, general kitchen sanitation, kitchen equipment, health and safety, personnel management.
- Working knowledge of the American Camping Association Standards as they apply to food service
- Working knowledge of basic food preparation principles
- Ability to effectively supervise kitchen staff and operations
- Current ServSafe Food Manager Certification (must obtain within 8 weeks of hiring - financial support available)
Core Responsibilities & Essential Functions:
- Coordinating and managing all aspects of Holiday Home Camp food service program
- Carrying out the duties of the kitchen in compliance with all ACA, State and Federal food preparation, storage and kitchen sanitation codes
- Supervising the maintenance of all records pertaining to food production, purchases, and USDA/DPI food programs
- Adhere to ACA and State standards/codes pertaining to all maintenance duties
- Assisting in coordinating the flexible needs of camp programs with the food production schedule
- Must be able to train and provide necessary instruction to campers and/or staff
- Must be able to use and teach the safe use of kitchen equipment
- Must be able to maintain an appropriate inventory of food and supplies
- Must have the ability to enforce appropriate safety regulations.
What is Holiday Home Camp?
Holiday Home Camp (HHC) provides free summer camp to youth from underserved communities! Based on Geneva Lake in Williams Bay, WI, HHC have remained true to their mission since 1887 and are the oldest ACA accredited camp still operating in its original location! In 2022, HHC was the recipient of ACA's Program Excellence Award!
During the summer, HHC serve over 700 kids aged 7-14 years with an additional week for their teenage leadership program - The ELITE Program. Campers participate in a range of traditional camp activities that includes archery, arts & crafts, recreational sports, dance, drama, swimming, tubing, outdoor education and so much more!
Our goal: to provide campers with new life skills and experiences that will help them be a positive influence within their families, schools and communities.
Work Schedule & Training
The majority of HHC staff will adhere to a schedule that runs from May 28 to August 7, allowing for several days off in between 6-day sessions. There are 7 sessions in total, but before they begin, staff participate in a 2-week staff training period running from May 28 to June 7.
The Head Chef will have a slightly different schedule that would allow them to get the kitchen prepared for service and start dates prior to May 28 can be discussed with the Camp Director. There is also an opportunity to work beyond August 7.
The Head Chef, alongside their kitchen assistants, will be responsible for overseeing meal service at 8:20am, 12pm and 5pm.
Staff will have the opportunity to gain two certifications at no additional cost should they not hold them already:
1. First Aid, CPR & AED
2. CPI (Crisis Prevention Institute) - Nonviolent Crisis Intervention
If the Head Chef does not hold a current ServSafe Manager certification, this is something that HHC are happy to explore funding.
Accommodation, Meals & Pay
Staff members are required to reside on the campsite during the session period. However, they can choose to live elsewhere on their days off. Multiple locations on the camp offer access to Wi-Fi. If you are a local resident, we can discuss the on-site requirements.
During the session, all meals will be provided to the staff members. They can also access leftovers during their days off. Additionally, staff members will receive a summer salary and payment every other Friday. The Head Chef salary will depend on the experience and contract length.
