Duties & Responsibilities
- Manage Dining Service Operations • Prepare snack menu on a semester basis for ECDL and CDL buildings that meet CACFP and DCFS guidelines/standards. • Coordinate with catering service to create a lunch menu for ECDL and CDL buildings that meet CACFP and DCFS standards. • Work with kitchen staff to maintain inventory of food to control food costs. • Order food weekly from GFS to stock kitchens for snack menus. • Monitor food deliveries to ensure food is up to code. • Maintain current Nutrition Labels of food served on our snack menus. • Plan Family Picnics and other events requested by Administrative Staff. • Act as a liaison between classrooms and kitchen staff. • Keep record of food allergies and meal choices for children and staff to ensure food safety.
- Supervision
• Ensure menus are followed as planned; document any necessary changes for DCFS and CACFP records.
• Complete Annual Reviews for Kitchen Staff.
• Maintain CDL storage and supply areas to pass semester kitchen inspections.
• Establish work schedule to ensure kitchens are time efficient.
• Approve leave requests based on available schedule.
• Supervise kitchen use and clean up by CDL teachers and researchers using the facilities.
• Make sure kitchen staff is following procedures put in place through the Illinois Department of Public Health. (i.e., Food temperatures are logged, proper handwashing procedures
are followed, food is dated). • Complete any other related duties as assigned. - Manage USDA Child and Adult Care Food Program • Collect all receipts and documentation throughout the month and document on a running spreadsheet. • Email monthly profit loss totals to CACFP representative on a monthly basis. • Communicate with CACFP representative regularly to ensure all documentation is up to date.
