Duties & Responsibilities
- Operations:
• Supervise, review and manage inventory, storage and distribution at Illinois Street Residential Dining.
• Monitor compliance with all health department, HACCP, OSHA and University policies and procedures. Develops systems to oversee sanitation, health code compliance, maintenance and repairs.
• Remain apprised of new concepts, practices, theories, trends and issues in the food service industry and institutions of higher education.
• Assess anecdotal and performance data from various sources and establish continuous improvement in processes and programs.
• Manage and support all operating units in the procurement and distribution of products and services.
• Manage and coordinate all operations of the Illinois Street residential dining unit; retail and all you care to eat.
• Work with the Assistant Director of Dining for Facilities and Equipment to ensure that all equipment is operating correctly and suggests improvements or replacements.
• Other duties as assigned. - Leadership and Supervision: • Work with the Senior Assistant Director of Dining to establish and direct implementation of operational policies and procedures. • Manage a large and complex staff with a wide range of knowledge, skills and abilities consisting of union staff represented by four labor unions and non-union staff. • Understand, respect, and value the diversity of the workforce, customers and constituents of University Housing and Dining Services. • Actively promote a positive work environment and department image. • Establish rapport with clients and assist in the operation of Housing Food Stores. Supervise and guide service standards provided to students, guests, parents, faculty and staff. • Establish expectations and model professional communications with students, parents, guests, staff, and campus partners. • Manage emergency protocols related to building emergencies. Serve in a crisis management role as needed. • Plan operational schedules for Illinois Residential Dining; direct and approve timekeeping and in excess needs based on operational demands.
- Financial Management:
• Assist in the building of operational budgets for Illinois Street Residential Dining.
• Work with the Senior Assistant Director of Dining to develop short-term and long-term financial reports for operational areas.
• Provide operational direction for staffing operations to ensure fiscal responsibility.
• Review and suggest best practices and improvements for daily operations.
• Review financial reports from Housing Business Services to ensure accurate cost accounting. - Human Resources:
• Conducts performance evaluations for staff, coach and mentor for professional development to build and strengthen the quality of personnel working for University Housing Dining Services.
• Communicate and provide leadership and direction for personnel to ensure programmatic benchmarks, goals and objectives are clear and followed through on.
• Work with departments to provide feedback and guidance to ensure that best practices are established and in compliance with federal, state and University policies and procedures.
• Actively uses the PPP program to guide the performance of staff.
• Actively monitors unit logs and addresses personnel matters.
• Defends the actions taken by management for the unit in personnel hearings.
