What are the responsibilities and job description for the Certified Dietary Manager position at Jefferson Manor Nursing & Rehab?
Education: Associates or bachelor’s degree in food service management preferred. High school diploma or equivalent required.
Experience: Previous food management experience preferred. In addition, proven compliance history, an ability to manage a large diverse staff and an ability to drive change and improve quality are required.
SPECIAL DEMANDS: As supervisor you must have a genuine interest in working with geriatrics residents. Have a willingness to perform routine, repetitive tasks on a continuous basis, and perform tasks despite frequent interruptions. You must have the ability to perform tasks with consideration for residents in you work area. Initiative and judgment in supervising other employees assigned to you. Be able to recognize areas that need attention by your department and supervise your department in correcting those areas of concerns.
JOB KNOWLEDGE: Ability to supervise, organize, communicate, and perform the essential tasks and duties; make decisions; deal with families, residents and staff; follow requests; able to use cooking equipment; aware of dietary policies and procedures.
STANDARDS: Knowledge of and ability to meet regulations of state, federal and OSHA.
DUTIES AND RESPONSIBILITIES:
- Organize, direct, plan and control food service operations for the kitchen and dining room.
- Supervise dietary staff, including hiring, orientation, training, scheduling, in-service and employee evaluation. Dietary Manager Page 2 of 2 Published 2016.07
- Assist with the development and implementation of appropriate menus for residents.
- Maintain recipes for therapeutic and regular diets.
- Prepare nourishment and supplemental feeding.
- Work with staff in planning and preparation of special meal for parties, banquets, etc.
- Participate in patient care planning, developing, recording and administering the dietary portions of the plan.
- Participate in MDS preparation as appropriate.
- Adhere to operational budget.
- Other duties as assigned.
OTHER WORK VARIABLES:
Working Hours: Day shift from 8:00 a.m. to 5:00 p.m. with an hour off for lunch, with an occasional evening shift for special occasions or as assigned by supervisor; some weekends and walk-throughs on weekends for supervisory purposes.
