Overview
Journeyman Meat Co is a small Federally inspected meat processing facility located in Cloverdale, California, that specializes in producing traditional Italian meat products (salami, pancetta, guanciale, etc.), as well as a variety of American meat products (bacon, fresh and smoked sausage, ham, etc.). The shift hours for this position are from 6:30 AM to 3:00 PM, Monday through Friday.
The Production Lead position runs all raw production in the plant to produce the meat products such as salami, bacon, raw and smoked sausages and cooked hams per specifications. Position oversees 2 - 3 people performing day to day meat product manufacturing tasks (cutting, grinding, mixing, stuffing, tumbling, vacuum packaging, etc.) and perform whatever else is needed as decided by management (help with inventory, organization, etc.). This position will have additional responsibilities that pertain to ensuring the overall quality of the products that are produced are produced to exact specifications. This will include specification review, performance of quality verification checks, HACCP (Hazard analysis and critical control points), and food safety checks, documentation and record keeping, etc.
Necessary Qualities:
· Strong Management & leadership skills
· Ability to work 8-hour days
· Ability to lift and carry 50 pounds
· Confident working with a knife
· Ability to follow instructions accurately and correctly
· Must have attention to detail
· Ability to lead operating processing machinery and troubleshoot when needed
· Ability to perform quality and specification verification checks
· Strong communication ability and willingness to report potential product issues to plant management in a timely manner
· Proficient with Microsoft Office software (Excel and Word) and Google Sheets
· Reliable transportation to and from work
· Quick learner and great listener
Helpful Qualities:
· Experience working in food production
· Knowledge about meat and sanitation
· Experience working with food safety controls
· Interest in traditionally made Italian meat products

Pay: $28.00 - $32.00 per hour
