About the Job :
Kernel is seeking the best dedicated operations-oriented culinary management talent in New York. We are looking for people who want to work hard, grow, and learn, and who are great to be around.
This role is key in leading production in our Central Kitchen while managing teams of cooks and dishwashers. You will be extensively involved in daily organization, scheduling various shifts of teams, forecasting inventory needs, preparing food from scratch with the highest standards, and ordering with respect to custom planning software.
This role will address any and all production challenges promptly and efficiently.

The role is full time with a variable schedule
What You’ll Do :
Optimize labor and prep scheduling
Manage and work hands-on with teams of Cooks and Dishwashers throughout daily prep, cooking, and cleaning in the Central Kitchen
Lead the Culinary team to ensure food the highest quality food is produced on time
Work stations in the restaurants when necessary
Open and / or close the Central Kitchen and Restaurants
Ensure food meets all quality and safety standards
Follow scaled recipes with high accuracy using metric weights
Ensure speed of production is on par with demand respective to lead times
Act as vital communicator between the Central Kitchen and restaurants
Maintain pars of received, prepared, and ready-to-go food
Manage and reduce waste, monitor inventory while preparing order lists for Culinary team, and placing orders as needed
Act as role model by teaching our standard operating procedures and providing constructive feedback when appropriate
Accept, reconcile, and inventory daily deliveries from distributors, finding solutions for those that arrive late or are incomplete
Work off of screens and monitors to receive vital information for prep tasks, opening, and closing sequences.
Practicing quality assurance throughout each step of production
Guide Department of Health officials during inspections
Assisting the Culinary Director with menu item research and development as needed
About You
Required qualifications
NYC Food Safety Manager Certification
6 years of experience in the restaurant industry
2 years of recent management experience
High volume commissary and / or food production manufacturing management
Ability to manage large teams of full-time and part-time cooks and dishwashers across multiple shifts
Ability to balance delegation of tasks and work side-by-side with the team
Technical and applied understanding of traditional cooking methods and recipes
Ability to prepare large batches of food from scratch in an organized, clean, and safe fashion
Excellent understanding of HACCP
Excellent verbal and written communication skills
General knowledge of google based software including spreadsheets and file sharing
Self starter who is proactive, thoughtful, and a problem solver
Ability to lift 50 pounds
Ability to stand for 10 hours per shift
Preferred qualifications
Degree in Culinary Arts
Likes to work with innovative tech
Experience managing a new restaurant team build from scratch
Experience working with contract food manufacturers
Ability to work independently in a fast-paced and rapidly changing environment
Experience managing complex culinary production flow systems
Knowledge in LEAN manufacturing
