As a Senior Meat Cutter, you will not only be responsible for cutting and preparing meat products but also contribute to training and guiding other team members, ensuring the department operates smoothly.
Position Responsibilities:
- Cutting: Accurately cut all steaks, roasts, and grind meats to meet both thickness and trim specifications outlined in Kessler’s production guide.
- Filling the Cases: Follow the Par List to produce the correct amount of product, ensuring we meet daily needs without overproducing and generating unnecessary shrinkage. Ensure advertising items are always in stock.
- Cleaning: Maintain a clean and organized production area, including regular cleaning of the saw, grinder, and other equipment, in accordance with store standards and safety protocols.
- Quality First: Inspect all incoming meat products from vendors to ensure they meet Kessler’s quality standards.
- Organizing and Product Dating: Organize meat items daily in the cooler and freezer, following Kessler’s product dating program to ensure proper rotation.
- Expert Cutter: Be skilled in using both knives and saws to properly cut and prepare all meat products with precision and care.
- Speedy Production: Work efficiently, meeting production goals and deadlines while maintaining attention to detail and quality.
- Labeling and Packaging: Properly use scales, department codes, and packaging materials to ensure accurate labeling and presentation of all meat products.
- Product Knowledge and Expertise: Possess in-depth knowledge of all meat products, cutting standards, and can confidently make recommendations to customers based on their needs.
- Customer Service: Provide speedy, friendly, helpful, and thankful service to customers, consistently promoting Kessler’s values of unmatched customer service and product quality.
- Work Hours: Open availability, including weekends and holidays as needed.
- Age Requirement: Must be 18 years or older.
Requirements
- Proven experience as a meat cutter, butcher, or in a similar role, with industry experience.
- Strong knowledge of various meat cuts, preparation techniques, and industry best practices.
- Excellent knife skills and proficiency in the use of meat cutting equipment.
- Ability to work in a fast-paced environment while maintaining attention to detail.
- Strong customer service skills with the ability to communicate effectively and professionally.
- Knowledge of food safety regulations and proper sanitation practices.
- Ability to work a flexible schedule, including evenings, weekends, and holidays.
- Physical stamina and the ability to lift heavy objects up to 50 lbs and stand for extended periods.
- High school diploma or equivalent; certification in meat cutting or butchery is preferred.
