We are looking for an experienced Pastry Cook to join the team at our boutique French patisserie on Mercer Island. This position is focused on running our daily proof/bake with a high attention to detail. There is additional opportunity for a variety of other pastry production depending on your experience, skill level, and interests.
***Experience with laminated dough production particularly desirable.**
We are in search of a team player who is highly motivated, detail oriented, and exceptionally reliable, to join us. Please be a positive, glass half full type of person who can bring humor and grace under pressure and have a strong work ethic even when working independently. Please be able to set and maintain a high level of execution in all you do.
We bake fresh from scratch daily in order to provide the best quality product for our customers.
Typical duties include:
*Mixing of daily doughs to recipe standards with consistency
*Lamination of croissant, brioche and puff pastry-desired but not required
*Understanding and producing according to the daily production schedule
*Running the daily proof and bake 4 days per week
*Other pastry production according to experience
*Keeping area clean, stocked, and organized
*Communicating to manager any stocking or equipment needs
*Reviewing finished products with manager to ensure quality and consistency and being open to productive discussions if modification needs to be made.
*Dishes and other side work as required to keep our work environment to a high standard at all times.
Qualifications:
Prior experience with proofing and baking a variety of laminated products to a high standard
High level skill/experience with general pastry techniques across multiple formats
Ability to read and follow productions lists and recipes and to problem solve
A strong desire to be excellent!
To work quickly, efficiently and with intention
Ability to be on your feet lifting 5-50 lbs regularly
Willingness to consistently respect our kitchen equipment. This is a very nice, new space that we need to maintain accordingly. Additionally, our kitchen is visible from both FOH and outside, so the overall impression we are giving the public is very important.
We are hiring for full-time, 40hrs per week. Starting pay based on experience.
Schedule is Wednesday-Sunday
