About the Role
This position is responsible for overseeing the affinage and aging process for various Aged Cheese products. The successful candidate will work under the direction of the Creamery Supervisor and other Aged Cheese leadership staff to ensure the efficient operation of the drying rooms and formed product preparation.
The ideal candidate will have basic computer skills and be able to read, write, comprehend, and follow verbal and written instructions. They will also possess basic mathematical skills and be able to accurately work under limited supervision.
Key Responsibilities:
- Set up and dismantle machines, clean, and sanitize equipment as needed
- Coordinate with cheesemakers to ensure smooth production processes
- Maintain machinery efficiency and detect malfunctions promptly
- Control product weight, take measurements, and adjust machinery or technique accordingly
- Take pH, temperature, and moisture readings on product to control the aging process
- Complete cleaning and sanitizing tasks according to schedule and necessity
- Prepare ingredients, record lot numbers, and complete quality and accounting paperwork
- Assemble pipes, connect vats, pumps, and other equipment based on process requirements
- Perform environmental cleaning following company Quality Plan guidelines
- Collect samples for Quality Assurance as needed
- Communicate regularly with other departments on specific work processes
- Report issues and progress to the Quality Assurance Manager, Creamery Manager, or Creamery Supervisor
- Ensure a safe working environment while performing assigned tasks
- Adhere to all standard operating procedures (SOPs) and follow all procedures, GMPs, Safety, Quality, and Sanitation plans
- Identify and report potentially non-conforming product and equipment to the Supervisor and Quality Assurance Department
- Be flexible in work performed and schedule
- Other duties as assigned
