Job Summary:The Pastry Chef at Ledesales, a French bistro with sushi fusion, is responsible for designing, preparing, and presenting exceptional desserts and baked goods that complement the restaurant’s unique menu. This role offers the exciting opportunity to develop a pastry program that could extend to three distinct restaurant concepts under the same management: Ledesales, Bonne Vie (Baby Shank location), and a new concept at the MXDC location. The Pastry Chef will ensure consistency, creativity, and high quality while managing production and collaborating with kitchen leadership.
Key Responsibilities:
- Create and prepare a variety of desserts, pastries, and baked goods that align with the French bistro and sushi fusion aesthetic of Ledesales.
- Develop innovative dessert menus, incorporating seasonal ingredients and balancing sweet offerings with savory menu elements.
- Oversee all aspects of pastry production, including baking, plating, and presentation, ensuring consistency and excellence.
- Collaborate with the Executive Chef to pair desserts with the restaurant’s food and beverage offerings.
- Manage pastry inventory, including ordering ingredients, monitoring stock, and minimizing waste.
- Maintain a clean, organized, and sanitary pastry station in compliance with health and safety regulations.
- Train and supervise any pastry assistants or kitchen staff involved in dessert preparation.

Qualifications:
- Minimum of 3-5 years of experience as a Pastry Chef or in a similar role in a professional kitchen.
- Formal pastry training (e.g., culinary school with a pastry focus) or equivalent hands-on experience.
- Expertise in a wide range of baking techniques, including breads, cakes, tarts, and plated desserts.
- Knowledge of French pastry traditions; experience with fusion or Asian-inspired desserts is a plus.
- Proven ability to innovate and adapt recipes for diverse menus and scalability.
- Strong organizational skills to manage production across potentially multiple locations.
- Understanding of food safety, sanitation, and inventory management practices.
- Physical ability to stand for long periods, lift up to 50 lbs, and work in a fast-paced environment.
