Job Description

Follows all cleaning and sanitizing procedures per USDA Inspection Guidelines
- Completes all deep cleaning tasks, such as breaking down cleaning and sanitizing all machinery, tools, walls, floors, and all work surface areas
- Properly reassemble, oil, maintenance and store any and all machinery and equipment
Check in deliveries accordingly
- Verify meat delivered matches invoice
- FIFO all meat brought in with meat already in house
Label all daily individual orders clearly and accurately
- Verify weight, date, number of boxes etc.
Package all individual meats properly with correct labeling
- Verify weight, date, number of boxes etc.
Trim pork butts, pork ribs and turkey in a timely efficient manner without guidance, all while adhering to the high standards of quality of LMB
- Follow par sheets daily to ensure accuracy and consistency
- Verify weights with daily par sheet
- Trim to the precise standards and quality that LMB requires
Make sausage without guidance
- Ensure meat ratios are accurate for grinding
- Weigh out sausage seasonings per recipe guidelines
- Ensure mixing process is followed accurately and accordingly
- Pump/twist sausage with consistency and accuracy
Trim briskets without guidance
- Work with teammate in the brisket trimming process
- Make first cuts of brisket before handing off to whizzer operator
- Operate whizzer with accuracy, efficiency, and most of all safety
- Examine all briskets before packaging to ensure LMB standards and quality are upheld throughout the whole process/ makes adjustments accordingly
Fill out all log sheets regarding room/product temperatures and deliveries
- Check/record temperature regularly in fabrication room
- Check/record temperature regularly in walk in
- Check/record meat temperatures when deliveries arrive
- Check/record meat temps when opening new product
Work with Pit and Meat Managers in regards of quality concerns
- Trouble shoot/correct any issues that arise in regards to quality
Deliver/drive any product as needed
- Ensure all deliveries are delivered safely and temps are maintained
- Help unload and put away at each location
Pay range $16 per hour tips - Averages to $22-$25/hour
