POSITION OVERVIEW: 


This position is responsible for the overall operation of specified Food & Beverage dining venues.  This position ensures Food & Beverage venues are operating to the standards set forth below. Ensures meal quality and guest satisfaction. Must be able to demonstrate proficiency with standard food and beverage concepts, practices, and procedures. Relies on experience and judgment to plan and accomplish goals. Will lead and direct the work of others. A certain degree of creativity and latitude is expected. 

    

This position collaborates with corresponding F&B Manager to ensure adherence of the department budget; continually analyzes the daily profit and loss trends for specified venues and makes adjustments accordingly. This position ensures the confidentiality, security and accuracy of guest’s and team member’s records, and promotes positive guest and team member relations. Strong written and verbal communication skills are required and outstanding guest service to fellow team members, guests, vendors, etc. is expected.  Regular attendance is required, and later hours or weekend times are expected based on business needs. A neat well-groomed professional appearance is essential at all times    

 

SUPERVISORY RESPONSIBILITY: 

This position directly supervises; Supervisors, Sous Chefs, Servers, Cashiers, Bartenders, Baristas, Line Cooks, Dishwashers and Kitchen Staff.  

 

 

ESSENTIAL FUNCTIONS: 

The essential function of the Room Chef includes but not limited to: 

  • Directly responsible for the overall operation of specified dining venues 
  • Adherence to quality, consistency, and presentation standards defined by Director(s) of F&B. 
  • Ensures adherence to the department budget, with Executive Chef.. 
  • Continually evaluates the profit and loss of the various department divisions and makes changes accordingly. 
  • Inspects kitchen areas in accordance with division policies and procedures, to ensure all areas are neat, clean and organized. 
  • Collaborates with corresponding F&B Manager in determining venue offerings in the various venues and is expected to make regular presentations to department Leadership. 
  • Ensures successful execution of group functions with meeting/banquet/events. 
  • Supervision and direction of company and department administrative processes; including timeliness for internal deadlines for contracts, payroll, Team Member forms (PANS, evaluations, etc). 
  • Responsible for event billings, with particular regard to accuracy and timeliness. 
  • Ensure purchases and inventory processes for all operational areas, including opening and closing inventories, accurate summaries; monthly inventory count completed. 
  • Responsible ensuring that department equipment is functioning and PM schedule is adhered to. 
  • Monitor labor expense; ensure appropriate staffing levels are met to meet business needs. 
  • Ensures that all consumable inventories are properly labeled and rotated. 
  • Oversees the cost effective procurement of food in accordance with Casino purchasing policies and procedures. 
  • Ensure staffs present a professional attitude and proper business attire when on property, ready to meet or service guests at any time. 
  • Remains current on industry trends applicable to Food & Beverage in the regional and local geographical area; makes recommendations accordingly. 
  • Participates in the development and implementation of both an organizational and department strategic and budgetary plans. 
  • Monitors the quantity, quality and cost of consumable products to ensure the department is meeting or exceeding its pre-determined standards and goals. 
  • Develops and implements department policies and procedures to safeguard the casino’s assets and guests’ confidential information. 
  • Mentors department Team Members and spearheads the departments’ succession plan with a primary focus on Chehalis Tribal Members. 
  • Ensures department performance evaluations, Team Member recognitions, and disciplines are conducted in a professional and timely manner. 
  • Exemplifies the casino’s “Soaring Service Program,” mission statement and core values. 
  • Promotes and fosters both a positive morale and guest service culture throughout the casino. 
  • Remains current on the facility disaster plan, understands his/her role and ensures department associates are trained accordingly. 
  • Ensures compliance with all applicable Tribal, State and Federal laws, rules and regulations. 
  • Performs other duties as assigned. 

 

EDUCATIONAL REQUIREMENTS: 

A High School Diploma or GED is required for this position. Prefer previous Food and Beverage experience, at the Chef  level, in a Casino/Resort type industry with a high banquet volume and multiple restaurant venues. Must possess a working knowledge of standard F&B terminology, theories and practices. Must be result oriented and driven with the ability to be flexible and work well under pressure, must possess proven administration skills with financial planning and the ability to analyze data and trends to implement strategies for improvement in these areas. 

 

SKILL, KNOWLEDGE AND EXPERIENCE REQUIREMENTS: 

Must have five (5) years of culinary experience required with advanced knowledge in; food preparation and presentation methods, techniques, and quality standards, and three (3years of progressive supervisory experience. Will be responsible for monitoring and/or maintain quality control standards. Must be able to receive stock, and/or deliver goods. A knowledge of maintenance and care of culinary facilities, equipment, supplies, and materials a plus.   

 

Must know State and County sanitation procedures and will be required to possess a current Washington State Food Handlers PermitServeSafe Permit. Will comply with, all Lucky Eagle Casino & Hotel Policies and Procedures, daily memorandums, chemical labels, and other instructions.   

 

Must be 18 years or older and have the ability to obtain and retain a Washington State Class III Gaming License; successfully pass a pre-employment drug screen; and have and maintain a driving record that at least meets the minimum requirements established by Lucky Eagle Casino & Hotel vehicle insurance provider.   

 

Manual and finger dexterity required for the operation of a personal computer, calculator, filing, routine paperwork and answering the telephone.  Ability to sit/stand for approximately six (6) hours at a time, walk, kneel, crouch, bend, reach, twist at waist, smell, taste, see and hear clearly.  Ability to perform repetitive tasks with fingers, hands and wrists on a continuous basis.  This position may be required to lift up to fifty (50) pounds on a regular basis. 

 

PHYSICAL REQUIREMENTS: 

The physical demands described here are representative of those that must be met by a team member to successfully perform the essential functions of this position.   

 

This position requires footwear with non-skid, slip resistant soles that will enable the team member to navigate a kitchen environment safely on floor surfaces commonly found in restaurants (i.e. smooth, wet and greasy restaurant quarry tile).     

 

While performing the duties of this position, the employee is frequently required to stand; walk; use hands to finger; handle; feel; or grip objects, stretch and/or reach with hands and arms; stoop; crouch or work in cramped or awkward positions; repetitive motions. This person may regularly lift and/or move up to 75 pounds. Specific vision abilities required by this position include close vision, distance vision, depth perception, and ability to adjust to focus.   

 

ENVIRONMENT: 

The environment characteristics described here are representative of those a team member encounters while performing the essential functions of the position. 

Primarily indoors and may be exposed to heavy smoke and fluctuations in temperature while in and around the Casino and/or Hotel. May be exposed to continuous exposure to water, heat, and may from time-to-time exposed to noise from slot machines, customers, music and public announcement system, as is common in a Casino and/or Hotel environment. Lucky Eagle Casino & Hotel operates in a 24/7 environment.
