About the Role
The Director of Food and Beverage will serve as the face of the food outlets as well as in-room dining and floor beverage service. This person will be responsible for leading the team and ensuring great service for the casino guests.
Responsibilities
- Ensure positive and informative pre-shifts take place across all outlets, keeping the team engaged and informed about daily operations.
- Set and maintain high guest service standards, ensuring team members consistently meet these expectations to enhance the overall gaming experience.
- Provide hands-on leadership to the F&B department, ensuring the highest quality service to both team members and guests.
- Assist in establishing performance standards, quality control for products and service, staffing levels, and food/beverage cost management.
- Ensure outlets are well-stocked, maintained, and all equipment, lighting, and entertainment are functioning at their best.
- Supervise inventory control, estimating food and beverage costs, and ensuring efficient use of resources.
- Collaborate with the Executive Chef and Catering Sales Manager to achieve catering goals, design event menus, and determine pricing.
- Maintain regular communication with the purchasing department to ensure adequate supply inventory.
- Develop and manage the department’s budget, including capital expenditures and staffing costs.
- Monitor staffing levels to ensure compliance with budgetary guidelines.
- Recruit, hire, train, schedule, and develop team members and managers in the department.
- Provide constructive coaching and feedback to direct reports, both formally and informally, as needed.
- Address and resolve escalated guest service issues promptly and discretely.
- Ensure compliance with company policies regarding guest alcohol limitations and other related procedures.
- Communicate relevant operational information to senior staff, surveillance, and other key team members.
- Uphold and ensure adherence to the company’s non-disclosure and confidentiality policies.
- Foster a positive work environment, interacting well with others and boosting team morale.
- Respond immediately to any safety hazards, maintenance issues, or problems and report them through the appropriate channels.
- Be adaptable and willing to work a flexible schedule, including nights, weekends, and holidays, as required by business operations.
