PRIMARY PURPOSE: As a Sous Chef, you will be responsible for quality and proper presentation. You will also set the stage for guest experience with your welcoming smile and service. By understanding their unique stories and needs, you will own their experience to create WOW memories they will carry with them far and beyond their stay with us. PRINCIPAL DUTIES AND RESPONSIBILITIES: Oversee product consistency and make necessary modifications according to business needs Multifaceted decision making in collaboration with the Chef and Department Executives, including but not limited to proper ordering, guest assistance, and working with the front of the house Manage employee payroll, scheduling, training, and discipline Conduct training for Master cooks, cooks, pantry workers, helpers and kitchen workers on job responsibilities Assist Executive Room Chef by controlling food and labor costs, establish goals, and objectives that focus on profit, product and people Assist in overseeing kitchen-related activities pertaining to the normal operation of the restaurant, menu and staff Create, read, measure and execute recipes and new daily specials KNOWLEDGE, SKILLS, AND ABILITIES: Knowledge and understanding of all food products and skillfully apply culinary and cooking techniques Knowledge of health, safety and sanitation regulations Working knowledge of kitchen equipment and knife skills Working knowledge of weights and measures and various cooking techniques Able to lead and mentor a team Excellent customer service skills and interpersonal skills to effectively communicate with all business contacts MGM Resorts International develops, builds and operates unique destination resorts designed to provide a total resort experience, including first-class accommodations and dining, world-class entertainment, state-of-the-art meeting and convention facilities, and high-quality retail and gaming experiences.
