Job Description :
As the Bakery Production Lead at Michele’s Granola, you are the leader of our Baking Team and a key member of our Production Team. The primary role of each Production Team Member is the precise execution of several different recipes of granola cereal, preparation of the granola for baking, and quality assurance. As Bake Lead, you are responsible for participating in the Production Team’s work, overseeing the baking process, and providing leadership to the Baking Team.
As part of our small-batch granola production line, you will have clearly defined tasks to complete during the daily production shift, including weighing and mixing ingredients, spreading granola across large baking sheets, loading oven racks, and handling hot heavy pans. The position involves standing for extended periods of time, repetitive motion, moving at a steady pace, and may involve lifting objects weighing up to 50lbs.
Responsibilities of all Production Team Members include :
1. Following established food handling and other preparation procedures
2. Upholding our quality, food handling safety, and sanitation standards
3. Cleaning duties like dish washing, sweeping, and trash removal
4. Other duties as assigned, e.g., assisting the Packaging Team, and maintaining our facility
As Bakery Production Lead, you are responsible for participating in the Production Team and Baking Team’s daily work and providing leadership to the Baking Team to ensure all quality and food safety protocols are being followed.
Basic Expectations of Bakery Poduction Lead include :
1. Ensuring the highest quality finished product
2. Outstanding food handling and production skills, including time management, organization, reliability, and enthusiasm in the kitchen
3. Clear and consistent communications with all Production Team Leads and Team Members, the Packaging Team, and Operations Team.
4. Promptly and courteously addressing any baking process or personnel issues with the Baking Team and / or specific Team Members, with support from the Production Manager
5. Actively contributing ideas to improve workflow and product quality, and executing their implementation
Specific Roles of the Bakery Production Lead include :
1. Managing Baking Team scheduling with Production Lead and Production Manager when necessary, including setting a baking time schedule for the daily production and ensuring the Baking Team adheres to this schedule, including break times
2. Overseeing activity at all baking workstations to ensure hygiene and sanitation, allergen control, quality assurance, and baking procedures are being executed properly, and communicating with Production Manager about any corrective actions taken or needed.
3. Working with the Production Manager and Production Lead to rapidly resolve product quality issues and consistently improve product quality and Bake Team workflow over time.
4. Ensuring the maintenance of a clean, sanitary production facility and adherence to safe food handling practices, by conducting regular visual verification that correct procedures are being followed by the Bake Team
5. Communicating expectations, motivating all Bake Team members, as well as setting an example of excellence in the following areas :
a. Attendance & Punctuality
b. Hygiene and Sanitation
c. Organization and Time Management
d. Quality and Consistency of Work, including thorough Quality Assurance practices
e. Overall Contributions to the team, product, and company, including building a positive team and cooperative spirit, always exhibiting a professional demeanor, applying rigorous Quality Assurance practices throughout our daily production, and pro-actively responding to company’s opportunities for growth
6. Liaising throughout the day with Production and Packaging Leads about Quality Assurance, as well as informing the Production Manager of any issues as they arise and the determined resolution.
7. Participating in company response to customer complaints and making necessary revisions to production protocol
8. Conducting regular formal meetings with the Bake Team and completing daily communications via regular check-ins and written communications.
9. Cleaning the ovens, oven racks, and oven area per Master Cleaning Schedule, and assigning cleaning tasks to Bakery Team
10. Coordinating oven and oven area maintenance and repairs with Production Manager
11. Providing input to Production Manager on Baker performance for employee check-in meetings
12. Ensuring the completion Daily Record Keeping, including but not limited to :
a. Bake notes (in Production Master)
b. Rack QC notes
c. Employee Training Record
13. Other duties as assigned
