Overview
Miramont Country Club is seeking a talented and experienced Chef de Cuisine to lead our culinary team and elevate the dining experience for our members and their guests. The ideal candidate will be a creative and detail-oriented professional with a passion for excellence in food preparation, presentation, and service. This role involves overseeing kitchen operations, menu development, staff management, and ensuring compliance with safety and sanitation standards.
Duties
- Oversees and directs food preparation, presentation, and service quality while maintaining a high standard of food quality, taste, and consistency across all dining outlets.
- Supervises kitchen staff responsible for daily menu preparation to ensure that cooking methods, garnishing techniques, and portion sizes adhere to the Club’s standard recipes.
- Motivates all team members to better performance while upholding good team culture.
- Trains and supervises kitchen staff, fostering a positive and professional work environment.
- Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.
- Designs and executes innovative and seasonal menus that align with member preferences and Club events.
- Manages inventory, control food costs, and work within budgetary guidelines to maximize profitability.
- Keeps record of all disciplinary incidences and passes them along to the HR Manager including termination requests.
- Makes recommendations for maintenance, repair and upkeep of the kitchen and its equipment.
- Prepares reports, arranges employee schedules and costs menus and performs other administrative duties as assigned by the Executive Sous Chef.
- Personally works in any station as assigned by the Executive Sous Chef.
- Assists in the energy conservation procedures in the kitchen.
- Audits and approves kitchen employees’ time cards to ensure compliance with posted schedules.
- Ensures adherence to all food safety and sanitation regulations.
- Collaborates with the Catering Department and Club Management team to create customized menus for special occasions and private events.
- Engages with members to understand preferences and incorporate feedback into menu planning.
- Posts Nightly Food Utilization Sheet.
- Submits ideas for future goals, operational improvements and personnel management to Executive Chef.
- Attends staff meetings.
- Performs other appropriate tasks assigned by the Executive Sous Chef.
Qualifications
- Good attitude and highly motivated self-starter.
- High School diploma or equivalent.
- Proven experience as a Chef de Cuisine, Executive Chef, or similar leadership role in a high-end restaurant, hotel, or Country Club.
- Degree or certification in Culinary Arts or a related field preferred.
- Strong leadership, organizational, and communication skills.
- Expertise in various cooking techniques and cuisines.
- Knowledge of food costing, budgeting, and inventory management.
- Ability to work flexible hours, including weekends and holidays.
- Must be able to handle stress in a healthy and professional manner.
- Must be able to complete tasks in an accurate and timely manner.
- Knowledge of and ability to use dishwasher and other kitchen equipment.
- Knowledge of and ability to perform required role in emergency situations.
- Able to meet and perform the physical requirements and to work effectively in an environment which is typical of this position.
Licenses and Special Requirements
- Food safety certification.
Physical Requirements
- Must be able to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach.
- Must be able to continuous repetitive motions.
- Must be able to occasionally lift and/or move up to 50 pounds.
- Must be able to work in a busy, noisy environment.
- Must be able to handle working conditions which may be cold, hot, humid, wet/slippery.
- Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus.
