As a member of our hospitality team, the primary responsibility of a Lead Maintenance - Kitchen is to ensure the smooth operation of the hotel's kitchen facilities by assisting the Maintenance Supervisor in the day-to-day activities of the Engineering Department, with a specific focus on maintaining and repairing kitchen equipment. This role will include diagnosing and repairing various kitchen equipment, such as fryers, steamers, ovens, and dish machines, as well as conducting preventative maintenance to ensure optimal performance. A critical part of this role is to adhere to safety standards and comply with relevant codes and regulations to maintain a clean, safe, and efficient kitchen environment for the staff and guests.
- Diagnose and repair a diverse range of kitchen equipment, including ice machines, gas and electric appliances like fryers, steamers, ovens, pressure cookers, steam kettles, tilt skillets, dish machines, and combi-ovens.
- Perform routine cleaning and maintenance of grease traps to prevent blockages and ensure efficient drainage.
- Oversee the maintenance and repair of refrigeration units, including walk-in coolers and freezers, to prevent food spoilage and ensure food safety.
- Regularly calibrate kitchen equipment such as ovens, thermometers, and timers to ensure accurate and consistent cooking results.
- Ensure strict compliance with relevant insurance, local, county, state, and federal government codes, laws, and requirements related to kitchen equipment and maintenance.
- Promote safety and cleanliness standards by following MSDS and NFPA guidelines and maintaining a neat and organized work area.
- Respond promptly to all service calls, prioritizing urgent repairs to minimize disruptions to kitchen operations and providing exceptional customer service.
- Maintain detailed records of all maintenance activities, including work performed, parts needed, and parts used on service requests.
- Support maintenance-related tasks for new construction projects as assigned on service requests, ensuring adherence to safety regulations.
- Foster open and effective communication with other departments, consistently passing on relevant information.
- Monitor inventory levels of spare parts and equipment and submit purchase requisitions promptly, following standard operational procedures.
