Job Summary:
The Tudor Arms Sous Chef owns all aspects of culinary operations for Tudor Arms including but not limited to prepping, managing, and executing events and the hotel restaurant kitchen. The Sous Chef is responsible of the management of all kitchen staff in the absence of the Executive Chef.
Accountabilities:
The Sous Chef will be accountable for successfully executing the following responsibilities:
- Assist the Executive Chef with planning, managing, and executing events and tastings.
- Lead the kitchen staff during the Executive Chef’s absence.
- Ensure kitchen staff adhere to brand standards, menu specifications, culinary procedures, department rules and safety and sanitation requirements.
- Maintain cleanliness and organization of the kitchens.
- Assist in the restaurant with prep, covering shifts and training.
- Maintain first in first out standard regarding food labeling and product rotation.
- Responsible for providing supportive leadership to kitchen staff throughout food service.
- Assist the Executive Chef in monitoring kitchen activities and expediting orders to ensure quality, taste and presentation are complete.
- Responsible for the cleanliness and condition of kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation.
- Ensure proper food temperatures when cooking and proper storage afterward.
- Keep the workstation and kitchen equipment clean, organized and sanitized.
- Take charge of kitchen opening, closing and other side duties as directed by the Executive Chef.
- Record and monitor the food temp log and waste log.

- Overall cleanliness and organization of walk ins, coolers, etc.
Qualifications Required:
- Hospitality degree or 2 years in a kitchen industry
- Flexibility to work nights, weekends, and holidays
- Interpersonal and communication skills
- Problem solving and time management skills in a fast-paced environment
Experience/Knowledge Required:
- Ability to give clear direction and respond to inquires
- Strong organization, critical problem-solving, and multitasking skills
Physical Requirements:
- Candidates must meet physical requirements to effectively perform job responsibilities, which includes frequent standing, walking, sitting, reaching with hands and arms, traversing up and down stairs with no difficulty, and lifting up to fifty pounds.
