What are the responsibilities and job description for the Director of Dietary Services position at NORBERT PERSONAL CARE?
We are a local family owned senior care home and we're looking for a passionate Dietary Services Director to join our team. Prepares meals for residents according to posted menus or creates your own menu. Keeps kitchen clean and sanitary. Maintains budget and ensure inventory of dietary needs.

· No deficiencies in Dining Services Department on State Surveys.
· Ensures that meals are served timely according to posted menus, creates recipes for the team and cooks to follow, including all prescribed special diets.
· Resident Satisfaction levels for dining services categories meet or exceed company averages.
· Kitchen and food storage areas are kept clean and sanitary.
· Clean and professional appearance following Norbert dress codes.
Supervisory Responsibilities
Directly supervises all associates of the dining department while on shift. Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include training associates, planning, assigning, and directing work assignments and scheduling, participating in the performance appraisal process and supervision of associates, addressing complaints and resolving problems.
Essential Duties

· Meets Norbert Standards established for the Dining Services department.
· Reads, understands, and complies with State Regulations established for Food Service departments.
· Creates menus so that residents will know what meals they are expecting, and they will be well-balanced and healthy for the residents.
· Follows all requests for special diets in order to assure good resident health.
· Tastes, smells, and observes food to ensure conformance with recipes and appearance standards. Measures satisfaction levels among residents by walk thru and conversations with residents on meal satisfaction.
· Meals are served on time according to the established and posted meal times for the community, every time.
· Creates a snack schedule and menu in order to assure residents are getting adequate nutrition and hydration.
· Ensures that all equipment and work areas are properly cleaned, including walls and floors, in order to provide a sanitary kitchen environment.
· Assures all open food in refrigerators and freezers are covered and dated and that outdated food is discarded promptly.
· Washes and sanitizes dishes according to foodservice standards. Prepares sanitation sink according to directions and monitors and documents sanitizing solution levels. Assures dish water is at least 150-160 degrees before beginning to wash dishes. Assures rinse water is at least 180 degrees.
· Operates the dishwashing process in an organized fashion. Scrapes and stacks dirty dishes in preparation for cleaning. After food is served, keep dirty dishes running through the dish machine until all dishes are clean and ready for the next meal.
· Assures all freezers are maintained at 0 degrees Fahrenheit or below and refrigerators are maintained at 34-40 degrees Fahrenheit daily and the temperatures are documented.
· Presents a clean and neat appearance, wearing aprons, hair nets, and other protective clothing as necessary.
· Collects and places garbage and trash in designated containers.
· Is fully knowledgeable of the fire evacuation and disaster policy of the community and participates as assigned in fire and disaster drills.
· Demonstrates an understanding of compliance and ethics program policies and procedures.
· Completes all mandatory compliance, HIPAA and State and Federal regulatory training as required.
· Maintains appropriate degrees of confidentiality.
Performs other duties as assigned and which relate to the success of Norbert and the Care, Comfort, and Happiness of our residents
