The Assistant Food & Beverage Director at the Old Edwards Inn is responsible for managing all aspects of the F&B outlets. This includes organizing meal periods, setting up and executing events, overseeing outlet services, developing concepts, and driving innovation within the department, with a strong emphasis on detail, quality, and exceptional customer service.
The role also involves supervising restaurant staff, including hiring, training, coaching, disciplining, and conducting performance reviews on a daily, weekly, monthly, and annual basis. The Assistant Food & Beverage Director reports directly to the Food & Beverage Director.
Responsibilities
- Achieve budgeted food, beverage, and labor cost targets.
- Maximize profitability by controlling costs and ensuring quality service.
- Develop, implement, and manage the department's business plan and budget; monitor and control labor and food costs to meet objectives.
- Hire, train, evaluate, and manage staff performance while maintaining open communication and addressing issues promptly.
- Oversee inventory of china, cutlery, glassware, linen, and equipment, and manage annual/quarterly inventory projects.
- Supervise daily operations, including meal preparation, service, and staff scheduling to ensure consistent service levels.
- Monitor and maintain food and beverage quality, service standards, and plate presentation.
- Manage requisitions for supplies, including warehouse, non-alcoholic beverages, and liquor orders, following proper procedures.
- Enforce bar control policies and ensure compliance with state laws.
- Maintain accurate records for inventory, payroll, and costs.
- Attend weekly BEO meetings and provide event recaps.
- Handle guest issues, requests, and feedback professionally.
- Foster staff morale and ensure proper appearance and behavior.
- Ensure proper cash-handling procedures and coordinate housekeeping for operational areas.
- Perform staff training and development and other duties as assigned.
Qualifications
- A degree in hospitality or business management is desired
- Previous supervisory experience is desired
- Knowledge of food and beverage operations and preparation is desired
- Excellent communication and guest relation skills in English
- The ability to work well with a large group of people in a team environment
- Must be able to work well in stressful, high-pressure situations including the ability to
- handle guest complaints and disputes and resolve them to satisfactory results
- Must maintain composure and objectivity under pressure
- Must be effective at listening to, understanding and clarifying concerns and issues raised
- by team members and guests
- Must have the ability to work a flexible schedule including nights, days, weekends and holidays
