Job Description:
The employee should work with a knife in the dominant hand. Work should be done with a hydrolic cutter to remove the leg. The work will be done at an elevated station while the cows are moving in the main chain.
Work Procedure:
- Place the two knives in the sterilizer
- Make sure the knife sterilizer and leg cutter sterilizer are at the correct temperature
- Notify your supervisor if the sterilizer is not at 180 degrees
- Secure your harness to the safety cord
- Stop the cow with your left hand and make a cut in the rectal part away from the thigh
- Sharpen the knife with steel and place the knife in the sterilizer
- Alternate knives between each animal
- After you finish cutting the rectal part, turn the cow over with your hand to access the legs
- Use the paw cutter to put the paws between the blades
- Use both hands to activate the two switches at the same time on the leg cutter to remove the legs
- Ensure that the legs fall into the hopper so that the legs can be saved
- The leg cutter has to be sterilized between each animal
- Do not sharpen the blades of the cutter
- Only trained employees can sharpen the blades
- Other additional activities to be assigned.
