Job Summary:
The Food Service Operations Manager at Pata Roja Taqueria is responsible for leading all kitchen operations, ensuring the highest standards of food quality, safety, and efficiency. This role involves managing kitchen staff, overseeing food preparation, maintaining inventory, and upholding Pata Roja’s commitment to delivering authentic, high-quality Mexican cuisine.

Additionally, the Food Service Operations Manager will play a crucial role in managing the operations of Pata Roja’s food truck and leading Monday shifts to ensure consistency and quality across all service channels.
Key Responsibilities:Kitchen Operations:
- Oversee daily kitchen operations, ensuring consistency and quality in every dish.
- Maintain high standards of food preparation, presentation, and kitchen safety.
- Develop and refine recipes, focusing on authenticity and creativity.
- Work closely with front-of-house staff to ensure a seamless dining experience.
- Implement efficient workflows to handle high-volume service during peak hours.
Food Truck Management:
- Assist in managing Pata Roja’s food truck operations, including preparation, setup, and service.
- Ensure the food truck meets the same quality and safety standards as the brick-and-mortar location.
- Lead the food truck team, maintaining clear communication and efficient service during events and mobile services.
- Help plan and execute pop-up events, festivals, and catering opportunities.
Shift Leadership (Mondays):
- Take responsibility for leading the kitchen and front-of-house team on Mondays.
- Ensure smooth operations, from prep work to service and clean-up.
- Act as the primary point of contact for staff and address any operational issues promptly.
- Maintain Pata Roja’s standards of service and quality during Monday shifts.
Staff Management:
- Hire, train, and manage kitchen staff, fostering a positive and productive work environment.
- Schedule staff shifts to balance labor costs and kitchen needs.
- Conduct regular performance evaluations and provide coaching and feedback.
- Promote teamwork and communication between kitchen and front-of-house staff.
Inventory & Budget Management:
- Manage inventory levels, ensuring freshness and avoiding waste.
- Place orders with vendors, negotiating pricing and managing supplier relationships.
- Control food and labor costs to support profitability goals.
- Monitor kitchen expenses and contribute to budget planning.
Health & Safety Compliance:
- Ensure compliance with all health and safety regulations, maintaining a clean and organized kitchen.
- Conduct regular safety and sanitation checks, addressing issues immediately.
- Implement and maintain proper food storage, labeling, and preparation practices.
Qualifications:
- Minimum of 3 years in a kitchen management or head chef role, preferably in a fast-casual or Mexican cuisine setting.
- Proven leadership and communication skills.
- Strong organizational and time-management abilities.
- Experience managing budgets, inventory, and staff schedules.
- Culinary degree or equivalent experience preferred.
- Passion for authentic Mexican cuisine and community-driven dining experiences.
