Food & Beverage Manager – Luxury Beach Club in Greece – Summer 2025
The Peligoni Club is a family-run beach club in Greece. It’s a members-only retreat for a fun-loving bohemian crowd who want delicious food, creative cocktails, friendly staff and sumptuous settings, but without all the fuss that usually comes with high-end hotels.
We are looking for a Food & Beverage Manager to oversee the operation of our four summer restaurants, pop-ups, deli, events space, bars and beach service department. This is a fantastic opportunity to work with an ambitious independent company within which you are expected to be creative, entrepreneurial and proactive in developing the F&B side of the business, enhancing our overall product.
The ideal candidate will have previous management experience in fast-paced, multi-faceted F&B operations, ideally with experience of working in a high-end hotel, resort or private members club. The ideal candidate will be commercially focused and should be able to demonstrate their ability to deliver performance through effectively trained and engaged teams whilst maintaining standards in line with the club’s ethos.
This is a full time role based in Greece during the summer months and in one of our offices in the UK (London or Cotswolds) during the winter months.
Operations
- Be responsible for overseeing the operations of all of our F&B outlets, reporting to the General Manager
- Establish and enforce standard operation procedures and service standards
- Ensure compliance with health and safety regulations and maintain high standards of hygiene
- Introduce and implement stock controls
- Ongoing administration of F&B operating systems
- Work closely with other HODs to ensure a smooth operation across the club

Financial Accountability
Take full ownership of the F&B department’s P&L performance, ensuring alignment with the overall financial goals of the clubDevelop and maintain a clear procedure and formula for pricing to be able to set prices for food and beverage across the clubDevelop and implement strategies to optimise revenue streams across multiple outletsManage costs effectively by controlling food, beverage, and labour expenses while maintaining quality standardsGuest Experience
Proactively respond to guest feedback and implement continuous improvements to enhance the guest experienceWork with the Executive Chef to ensure menus and service standards align with the Peligoni brand and industry trendsInnovate ideas and help plan new F&B products / offeringsStaff Management
Be involved in the recruitment process for the whole F&B teamManage, train and develop the F&B teamEncourage a culture of excellence, teamwork and guest-centric serviceIncentivise team members to maximise sales and revenueConduct regular performance evaluations and provide coaching and feedback to your teamOversee daily staffing needs and scheduling, working within labour cost targetsEssential Requirements
Proven track record as an F&B manager in a luxury hospitality environment, preferably with multi-outlet experienceStrong financial acumen and experience managing a P&LStrong leadership abilities, capable of guiding and inspiring teams to achieve peak performance, with a hands-on management approachIn-depth knowledge of food and wine, staying updated with innovationsExcellent knowledge of food hygiene and health and safetyEffective communicatorHighly organised and target drivenExcellent customer service skills and ‘guest-first’ approachUnderstanding of EPOS operating systemsGood working knowledge of Microsoft Office, particularly ExcelFull driving license is desirableSalary & Benefits
