What are the responsibilities and job description for the Kitchen Manager position at Pitfire Pizza - Commissary?
Pitfire Pizza is seeking a Kitchen Manager for our Commissary kitchen in Venice. Our restaurant group, American Gonzo Food Corp, has twenty locations throughout Southern California including Pitfire Pizza, Superba Food Bread, Superba Snacks Coffee, American Beauty and The Win-Dow.
A qualified candidate will be a positive-minded and inspirational role model, hands-on, driven, and committed to upholding our standards. This leader must possess an owner mentality when operating the business, a strong level of financial acumen, and the ability to mentor and inspire a team.
Responsibilities:
- Production oversight of commissary items for American Gonzo restaurants
- Ensuring product standards are met and recipes are always adhered to
- Training, coaching and development of team members
- Logistics of driver team which consists of 2 two reefer trucks, 6 drivers and 7 day a week delivery
- Weekly inventory including meeting budgeted cost
- Scheduling, ordering, cleanliness, proper storage and organization, meeting all DOH standards, as well as Pitfire Pizza standards and processes
- Maintenance of commissary kitchen and upkeep of all equipment
Qualifications:
- 3 years of accomplished leadership experience in various food and beverage environments
- Commissary experience preferred; Large scale production, logistics and purchasing experience a plus.
- Proven track record of leading successful and productive teams
