What are the responsibilities and job description for the Pastry Chef position at Premier Chef Services?
Marthas Vineyard's elite catering company Premier Chef Services is looking for a Pastry Sous Chef for our busy upcoming summer season! We are the leader in elegant island off site catered functions including custom private chef dinners, weddings, rehearsal dinners, cocktail parties, clambakes, corporate events etc.. All of our events are custom designed around seasonal MV island ingredients and our clients unique preferences. Our client list includes A list celebrities & athletes, fortune 500 CEOs/Founders, as well as our VIP regulars and "mom & pop" island vacationers.
Employments dates are June 2nd-September 22nd, 16 weeks.
This position is responsible for all desserts, daily bread production and other savory baked items for the catering company.
This position requires extreme attention to detail with the ability to take direction from the owner and the CDC as well as working independently to manage and make quick problem solving decisions.
5 years of fine dining or high end baking & dessert management experience necessary. This position requires familiarity with diverse baking techniques and cuisines. Ability to create different varieties of breads, composed desserts, petit fours, baked fitness treats, traditional desserts (pies, cookies, (key lime pies, brownies etc), small custom cakes(Big wedding cakes are outsourced). Creativity is encouraged and required in this position, you will be working directly with owner to create seasonal dessert program for off site functions. Pastry chef will work with owner/executive chef prior to season in developing and reviewing our sample dining guide and menus to promote and sell to customers.
Keeping bakery pantry, prep for individual BEO's and refrigeration organized and consolidated at all times is required.
You will have access to the best seasonal ingredients sourced through local Martha's Vineyard farms as well as specialty bakery ingredient suppliers. Well equipped bakery and we will make sure you have all the tools you need to succeed. Ability to promote and showcase your dishes with a high end clientele base and in an exciting setting.
Positive and team oriented attitude an absolute must. We are too busy for ego's or somebody that is not willing to go the extra mile to get the job done. Our team is a family and although we work hard, we work together to provide the best possible experience for our clients and while supporting each other.
We will ensure that you have good island housing and will give you a monthly housing stipend or subsidize housing.
Additionally a pastry chef that is willing to work offsite hours will have a great opportunity to earn a high hourly rate to supplement salary or an increased salary. Ideally looking for a hybrid pastry chef that can also run events and has a savory background as well!
