Proper Hospitality is seeking an experienced Beverage Director to join our team at The Shelborne by Proper, a renowned hotel re-opening and debuting in our portfolio in early 2025.
Our property will introduce four vibrant new food & beverage destinations to the neighborhood, each suited for warm weather dining, with an all-day signature restaurant, a lobby bar-lounge, and curated cafe. Resort amenities will include a spacious pool and lush garden lounge, indoor-outdoor cabanas, sundeck terrace, state-of-the-art fitness center, dedicated access to a private beach club, and more than 15,000 square feet of indoor-outdoor meeting & event space.
The Beverage Director will lead our potentially award-winning beverage program at our luxury beachfront property, overseeing all aspects of beverage operations across multiple venues. This role requires exceptional leadership, creativity and business acumen to maintain our reputation for excellence in the beverage industry.
Key Responsibilities:
- Program development and management
- Develop and maintain innovative wine, spirits, and cocktail programs across all venues
- Create seasonal beverage menus that align with our culinary offerings and oceanfront setting
- Establish and maintain relationships with premium wine producers, distilleries, and distributors
- Negotiate pricing and maintain optimal cost controls while ensuring premium quality
- Implement and maintain proper beverage storage, rotation, and inventory systems
- Conduct regular market analysis to ensure competitive pricing and trending offerings
- Team leadership and training
- Recruit, train and develop a team of sommeliers, mixologists and bartenders
- Create and implement comprehensive beverage education programs for all F&B staff
- Conduct regular tastings and training sessions to enhance product knowledge
- Mentor team members in wine service, cocktail preparation and guest interaction
- Oversee scheduling and staffing levels across all beverage operations
- Quality Control and Service Standards
- Establish and maintain exceptional service standards for beverage presentation
- Ensure proper glassware selection, storage, and handling procedures
- Monitor temperature control systems for wine storage
- Conduct regular quality audits of beverage service across all venues
- Maintain detailed documentation of recipes, procedures, and standards
- Financial Management
- Develop and manage annual beverage budget
- Monitor and analyze beverage costs, pricing strategies, and profit margins
- Create monthly inventory reports and variance analyses
- Implement loss prevention strategies and oversee beverage control systems
- Forecast sales and adjust purchasing accordingly
- Marketing and Events
- Collaborate with marketing team to promote beverage programs and special events
- Design and execute wine dinners, tasting events, and mixology classes
- Develop beverage packages for private events and wedding programs
- Represent the property at industry events and competitions
Maintain relationships with critics and media representatives
Qualifications:
Required Experience & Certifications
- Minimum 7 years of progressive experience in luxury beverage operations
- Advanced Sommelier certification (Master Sommelier preferred)
- Proven track record managing beverage programs exceeding $3M in annual sales
- Experience with inventory management and POS systems
Demonstrated success in team leadership and development
Knowledge & Skills
- Extensive knowledge of wine regions, vintages and producers
- Expert understanding of spirits, cocktail composition and mixology trends
- Strong financial acumen and analytical skills
- Excellent communication and presentation abilities
- Proficiency in beverage-focused software systems
Fluency in English and Spanish
Physical Requirements
- Ability to stand and walk for extended periods
- Capability to lift and move cases of beverages (up to 50 lbs)
- Fine motor skills for detailed tasks and wine service
Ability to taste and evaluate beverages
