Responsibilities:
- Supervise and coordinate all activities at your workstation, dedicated to preparing and cooking food for various outlets.
- Maintain and enforce the restaurant's high standards, ensuring consistency and quality in all dishes.
- Assist the Team Leader in daily operations, including profitability, expense control, purchasing, merchandising, labor management, regulatory compliance, and special projects.
- Lead and develop team members through training, mentorship, and quality control.
Key Job Duties:
- Assist with the preparation and display of high-quality foods, as established by the Chef de Cuisine.
- Operate your assigned station as needed, ensuring all stations are properly set prior to service.
- Train and guide staff to adhere to the restaurant's quality standards.
- Ensure food is handled, processed, and stored in compliance with the Hazard Analysis Critical Control Point (HACCP) program and in accordance with Florida health and safety regulations.
- Maintain excellent customer relations, particularly in public areas of the restaurant.
- Report any questionable product issues to the Chef, maximizing product utilization and minimizing waste.
- Step in for the Chef de Cuisine when necessary.
- Assist with ordering and receiving supplies, as well as other duties as assigned.
- Create new dishes and menus based on business needs.
- Anticipate ingredient needs and arrange restocking as required.
- Ensure a productive kitchen flow that upholds the restaurant's high standards.
Knowledge & Skills Required:
- Strong understanding of health and safety regulations, including Florida's sanitation protocols and OSHA standards.
- Familiarity with kitchen equipment, proper usage, and maintenance.
- Ability to build effective working relationships with management, staff, and guests.
- Completion of a culinary or cook apprenticeship program preferred. A high school diploma or equivalent is required.
- Strong interpersonal, motivational, and team-building skills.
- Ability to teach and mentor others in a positive, constructive manner.
- Proficient in email, Microsoft Office, and operations-related applications.
- Advanced knowledge of regulatory and safety policies and procedures applicable to the food industry.
Qualifications:
- Experience working as a sous chef or chef.
- Strong knowledge of kitchen equipment, processes, and safety guidelines.
- Ability to delegate tasks effectively and step in when needed.
- Adaptable to high-traffic kitchen environments.
- Experience managing food and labor costs.
- Strong decision-making and leadership skills.
Additional Information:
- This is a salaried position requiring 50 to 60 hours of work per week.
- The position is based in Florida and is subject to all state and federal employment laws.
