Description
The Production Brewer will work under the direction of the Head Brewer to produce quality wort and perform all brewhouse operations with accuracy and consistency.
Primary Roles & Responsibilities
- Brewhouse operation: including wort production, cleaning of lauter tun, grain milling, and weekly brewhouse CIP
- Use proper cleaning and sanitation procedures on heat exchangers and piping to fermenters to ensure product quality
- Assist in cellar operations as needed including dry hopping, backside of brew, switching rigs between fermenters, resting and crashing tanks, and other tasks to support production schedule and to assist with cross training.
- Adhere to all SOP’s and contribute to continuous improvement of processes
- Maintain cleanliness and organization of all hop and grain storage areas
- Help keep brewhouse and cellar vessels/area clean and organized
- Securing the facility at the end of production week, including tank audit and completion of closing checklist
- Assist with cask conditioning program, specifically cask cleaning and sanitization, and specialty beer production as needed
- Train for and participate in sensory program
- Assist Head Brewer and Head Cellar Operator with projects and other tasks as needed
- Willingness to learn and take on new responsibilities as needed
Requirements

- Ability to lift or move up to 50lbs., or up to 150lb with assistance
- Repeated lifting of 35-75 lbs
- Ability to stand for long period of time and work in wet conditions
- Ability to safely operate fork lift, pallet jacks, and other machinery
- Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals
- Observe safety procedures and use equipment (including PPE), chemicals, and materials properly
- Adhere to standards for food safety and personnel GMPs
- Maintain current TABC server certification
- Participate in and provide support during Real Ale events at the brewery

This is full time, non-exempt position, reporting to the Head Brewer. This position is in Blanco, Texas. Typical schedule is Mon-Fri, including some evening and occasional weekend shifts.
