Red Fiddle Vittles is a catering company and local market that features high-end, gourmet food items that utilize and celebrate locally-produced ingredients. On the catering side of our business, we offer a high-end full-service event catering program, platters for pickup/delivery, and cheese & charcuterie grazing tables. On the market side, we prepare a weekly take-home dinner as well as premium freezer foods for purchase from our South Asheville storefront. This position would support both sides of the business and would be responsible for preparing a wide range of foods, including some items that are prepped each week as well as menu items for catering and take-home dinners that change week to week. This position will also include some customer service functions in-store and at catered events. We are a small company operated by a husband and wife team along with a staff of 2 full time prep/event chefs and contract event staff.
Head Chef Job Responsibilities:
- Oversee all aspects of food preparation, staff management/scheduling, inventory control, kitchen cleanliness, and food quality/consistency.
- Lead a team of 2 prep/catering chefs and foster a fun and positive kitchen culture. Work with event staff to produce flawless catering experiences and top-shelf service for clients.
- Create a daily prep list in collaboration with the Executive Chef that is organized and facilitates efficiency.
- Communicate ingredient/equipment/supply needs daily to Executive Chef based on inventory levels and upcoming menus/events.
- Provide exceptional customer service and remain flexible in bouncing from BOH to customer service duties as needed.
- Take full responsibility for maintaining and operating a clean and orderly kitchen.
- Confirm accuracy and quality of food orders and deliveries; ensure that all food and other items are stored properly and in an organized manner.
- Demonstrated mastery of nutrition, sanitation and food safety guidelines.
- Acknowledge and take responsibility for mistakes; create methods and systems for constant improvement
This is a full-time paid position with a minimum of 40 hours per week. Wage rate is $30/hour (plus tips) and is eligible for overtime pay. This position includes health, dental, mental health, and employer-sponsored IRA benefits. Schedules change week to week depending on event load, usually with at least one event shift per week in the evenings/weekends. Flexibility and ability to work evenings and weekends is a must.
Head Chef Qualifications / Skills:
- Management experience leading teams of 2 or more staff
- Demonstrated leadership in a high-functioning kitchen environment
- Level-headedness, patience and a willingness to teach others
- Exceptional organizational and communication skills
- Ability to remain flexible and adapt to rapidly changing environments and objectives
- Ability to stand for an 8 hour shift (with breaks) and lift up to 40 pounds
- Valid drivers license and a clean driving record
Education and Experience Requirements:
- High school diploma or equivalent is desirable
- Training from a culinary school is an asset
- ServSafe certification or willingness to become certified
- 5 years experience kitchen leadership role
- Valid driver’s license and reliable transportation
