A Head Chef should work the line on a scheduled and as needed basis with a typical schedule of approximately 55 hours per week. A Head Chef should be trained on every position in the kitchen and lead by example and will mentor and develop all BOH staff. They may also need to work with under-performing members of the team. Most importantly, the candidate should have a strong passion for cooking and an interest in managing a clean and organized kitchen.
This position is responsible for ensuring the highest levels of cleanliness and organization are maintained in the kitchen and all other kitchen storage areas at all times. This position should have strong knowledge of DHEC Regulations regarding cleanliness, food storage temperatures, and cook temperatures.
Responsibilities include:
- Contribute to daily manager logs
- Manage recipes, order guides, prep lists, schedule, inventory, variance report, food cost and labor
- Working the line and doing prep as needed
The Ideal Candidate SHOULD:
- Have proven work experience as a Kitchen Manager or Chef
- Full open availability
- Be a skilled delegator
- Be familiar with kitchen sanitation and safety regulations
- Be ServSafe certified or plan to be soon after being hired
- Possess a high level of communication and organization
- Be willing and able to be “hands on”
- Professional and confident communicator
- Be able to maintain effective standardized systems, processes, and controls
