POSITION: SUSHI CHEF
CATEGORY: NON-EXEMPT
SUMMARY:
The Sushi Chef will be responsible for preparing high-quality sushi and sashimi while ensuring an exceptional dining experience for our members and guests. This role requires expertise in traditional sushi techniques, a keen eye for presentation, and a commitment to using the freshest ingredients.
PRIMARY FUNCTIONS & RESPONSIBILITIES:
- Prepare a variety of sushi, sashimi, and specialty rolls with precision and creativity.
- Maintain the highest standards of food quality, taste, and presentation.
- Ensure proper storage, handling, and preparation of all ingredients in compliance with food safety regulations.
- Develop seasonal and specialty sushi menus in collaboration with the Executive Chef.
- Manage sushi bar operations, including inventory control, ordering supplies, and maintaining cleanliness.
- Interact with members and guests to provide an engaging and personalized dining experience.
- Train and mentor kitchen staff on sushi preparation techniques and food safety protocols.
- Monitor and maintain sanitation and hygiene standards in accordance with health regulations.
- Stay updated on industry trends and innovations to enhance the sushi offerings.
- Assist in catering and special events that require sushi preparation.
- Other duties as assigned.
QUALIFICATIONS & REQUIREMENTS:
- Proven experience as a Sushi Chef in a high-end restaurant, hotel, or country club setting.
- Extensive knowledge of sushi preparation, knife skills, and ingredient selection.
- Ability to work efficiently in a fast-paced environment while maintaining attention to detail.
- Strong understanding of food safety and sanitation guidelines.
- Excellent customer service and communication skills.
- Ability to work flexible hours, including evenings, weekends, and holidays.
- Culinary degree or relevant certifications preferred but not required.
PHYSICAL REQUIREMENTS:
- Ability to stand for extended periods and work in a fast-paced kitchen environment.
- Ability to lift and carry up to 50 lbs.
- Manual dexterity for intricate sushi preparation techniques.
