About The Role
We are seeking a highly skilled and innovative Executive Pastry Chef to oversee pastry and dessert operations across multiple restaurant and doughnut shop locations, as well as a central commissary in Las Vegas. This role is responsible for ensuring consistency, quality, and efficiency in all pastry production while managing cost control, inventory, and team training. The ideal candidate will have extensive experience in high-volume pastry production, menu development, and team leadership, with a strong ability to maintain operational excellence.
Key Responsibilities:
Recipe & Menu Development:
- Develop and standardize pastry, dessert, and doughnut recipes across all locations and the commissary.
- Innovate and introduce seasonal, trend-driven, and brand-appropriate pastry items.
- Ensure consistency in product quality, taste, and presentation across all outlets.
- Test and refine recipes to maintain quality and efficiency.
- Oversee product testing and refinement before full-scale implementation
- Ensure consistency in taste, texture, and presentation of all pastries and baked goods.
- Work with the General Manager and COO to align menu offerings with business objectives and customer demand.
Production & Commissary Oversight:
- Manage and oversee daily pastry and doughnut production.
- Optimize production processes to improve efficiency and minimize waste.
- Ensure all locations have fresh, high-quality products while maintaining brand standards.
Training & Team Development:
- Train and mentor pastry staff, bakers, and kitchen staff across all locations.
- Develop training materials and standard operating procedures (SOPs) to maintain consistency.
- Conduct regular site visits to monitor performance and provide hands-on coaching.
- Foster a culture of accountability, teamwork, and excellence.
Operational Oversight & Quality Control:
- Conduct regular audits to ensure compliance with company standards for pastry production and presentation.
- Monitor and maintain equipment, ensuring all locations have the necessary tools for pastry production.
- Work closely with General Managers and the COO to address and resolve operational challenges.
Cost & Inventory Management:
- Oversee ingredient procurement, ensuring high-quality products while maintaining cost efficiency.
- Monitor and control food costs, labor expenses, and waste reduction.
- Implement inventory tracking systems to maintain accurate stock levels at all locations.
- Collaborate with the finance team to meet budget goals and profitability targets.
Food Safety & Compliance:
- Ensure all pastry operations adhere to health, safety, and sanitation regulations.
- Train staff on proper food handling, storage, and kitchen cleanliness.
- Maintain detailed records for health inspections and compliance audits.
Qualifications
- Experience: Minimum of 7 years as a Pastry Chef, with at least 3 years in a corporate, multi-location, or high-volume production role.
- Education: Culinary degree in pastry arts preferred.
- Expertise in pastry techniques, doughnut production, bread making, chocolate work, and plated desserts.
- Strong leadership, training, and organizational skills.
- Proven experience in high-volume pastry production and commissary operations.
- Business acumen with a focus on cost control, efficiency, and profitability.
- Ability to travel between multiple locations and oversee operations firsthand.
- Passion for creativity, quality, and maintaining brand consistency.
