JOB SUMMARY

Directs the overall operation of the Food & Beverage Department. Requires a blend managerial ability, polished communication skills, and customer service excellence. Their daily responsibilities are diverse and demand the ability to adapt to various challenges and ensure a smooth and successful operation across the property.

ESSENTIAL DUTIES AND RESPONSIBILITIES (May include, but is not limited to the following)

  • Motivates team members by fostering teamwork, high team member morale and open communication. Provides direction and support for all staff to achieve property goals and objectives through the fair application of all policies and procedures
  • Coaches and develops supervisor/manager skills in performance management, assists in diagnosing and designing solutions to improve service quality
  • Develops and directs financial and business operating and capital expenditure plans that are consistent with the overall strategic positioning of the property
  • Ensure the delivery of high-quality food and beverage products and exceptional service in multiple outlets
  • Provides financial analysis and performance evaluation on each of the outlets on a regular basis
  • Monitor payroll costs, food cost and quality of product
  • Creates effective cost control measures and standards to manage business levels and create a quality experience for guests consistently
  • Creates and manages the Food and Beverage annual budget, provides monthly variance reports and quarterly reviews
  • Creates an environment where employees are engaged, challenged supported, and productive
  • Promotes the highest degree of guest satisfaction, ensuring consistent quality controls are in place, and providing timely feedback and recovery systems
  • Directs the Food and Beverage management, promote positive employee relations through timely employee performance evaluations, positive rewards and discipline, addressing complaints and resolving employee issues quickly
  • Negotiates items and prices with vendors ensuring profit margins are within acceptable levels
  • Work with Purchasing Manager to coordinate purchasing, receiving and rotation of stock

KNOWLEDGE, SKILLS, AND ABILITIES

  • Demonstrated ability to communicate effectively, both verbal and written
  • Strong organizational and analytical skills
  • Must possess strong financial analysis and cost control techniques
  • Capable of designing and engineering menus
  • Exceptional organizational development and personnel assessment/development skills.
  • Must be able to partner with the senior management team and contribute to the development and execution of strategic initiatives
  • Must have excellent guest service skills, be people-oriented and tactful when resolving problems with difficult guests. Must resolve differences so both the guest and the casino feel they have been taken care of properly
  • Ability to monitor service levels, working directly with team members at all levels to communicate suggestions for improvement, making sure these areas are properly addressed

PHYSICAL DEMANDS AND WORK ENVIRONMENT (May be required to perform the essential functions of the position)

  • Must be able to sit, stand or walk for long periods of time
  • Visual and auditory range must include immediate environment
  • Mobility to move about the property
  • Must have the manual dexterity to operate a computer and other necessary office equipment
  • Must have the ability to push, pull, reach, bend, twist, stoop, and kneel

GUEST SERVICE (INTERNAL/EXTERNAL) STANDARDS: Employee is required to meet and deliver our core values, service standards, and family style service.

PERFORMANCE REQUIREMENTS: Must have the ability to provide internal/ external guests with service excellence, have excellent communication skills and observation skills, and have an easygoing demeanor to ensure a fun and safe environment for our guests. Above average speech – both speaking and reading/writing English. Need excellent interpersonal skills. Work requires schedule flexibility which may include days off, nights, weekends, holidays, and overtime as needed.
