The Food Service Director oversees all aspects of the dietary department in a long-term care nursing home, ensuring that residents receive nutritious, well-balanced meals in compliance with federal, state, and local regulations. This role involves menu planning, staff supervision, budgeting, and ensuring high standards of food safety and sanitation.
JOB RESPONSIBILITIES:
- Plan, organize, and direct all food service operations to ensure high-quality meal service for residents.
- Develop and implement menus that meet residents' nutritional needs and dietary restrictions in collaboration with dietitians.
- Ensure compliance with state and federal regulations, including the Centers for Medicare & Medicaid Services (CMS), FDA Food Code, and local health department requirements.
- Maintain inventory, order food and supplies, and manage vendor relationships.
- Oversee food preparation and portion control to ensure quality and consistency.
- Recruit, train, schedule, and supervise food service staff, ensuring proper staffing levels.
- Conduct regular staff meetings and ongoing training to maintain high standards of food safety and service.
- Address concerns and feedback related to meal quality and service.
- Ensure adherence to infection control, sanitation, and safety guidelines.
- Maintain accurate records for health inspections, audits, and compliance reports.
- Implement and oversee food safety programs, including HACCP (Hazard Analysis and Critical Control Points)
Qualifications & Requirements:
- Associate or Bachelor’s degree in Nutrition, Food Service Management, Culinary Arts, or related field (preferred).
- Certified Dietary Manager (CDM) or Registered Dietitian (RD) preferred.
- Previous experience in a nursing home
- Knowledge of dietary regulations for long-term care facilities (CMS, state regulations, etc.).
- Strong leadership, organizational, and communication skills.
- ServSafe or equivalent food safety certification required.
