SkyBridge Luxury & Associates is proud to partner with an ultra-luxury resort in Los Angeles to source an experienced and creative Pastry Sous Chef . This role offers an exciting opportunity to work within a world-class culinary team, supporting the Executive Pastry Chef in delivering an exceptional pastry program. The Pastry Sous Chef will oversee daily pastry operations, contribute to menu innovation, and ensure the highest standards of quality and presentation for all desserts, breads, and confections.

This is a rare opportunity for a skilled pastry professional to join one of Los Angeles’ most prestigious resorts, known for its Michelin-level dining experiences, bespoke desserts, and impeccable service

Key Responsibilities :

Pastry Production & Menu Development :

  • Assist the Executive Pastry Chef in executing and refining the resort’s pastry program, ensuring consistency and excellence in every dessert.
  • Oversee daily pastry production for multiple outlets, including fine dining restaurants, in-room dining, banquets, and high-profile events.
  • Develop and test new dessert concepts, incorporating seasonal ingredients and innovative techniques.
  • Ensure all pastries and desserts are prepared according to the resort’s luxury standards and guest expectations.

Kitchen Operations & Team Leadership :

  • Supervise and mentor pastry team members, providing guidance on techniques, plating, and kitchen efficiency.
  • Maintain clear communication with the culinary team to coordinate pastry requirements for restaurant service, special events, and weddings.
  • Assist in scheduling, training, and performance evaluations for pastry staff, fostering a culture of excellence and creativity.
  • Enforce safety, hygiene, and sanitation practices in compliance with health department regulations and HACCP standards.
  • Quality Control & Presentation :

  • Ensure every pastry item meets the resort’s quality and presentation standards before reaching guests.
  • Oversee the production of wedding cakes, chocolate work, and artisanal bread for VIP clientele.
  • Monitor ingredient sourcing, ensuring the use of high-quality, locally sourced, and sustainable products whenever possible.
  • Financial & Inventory Management :

  • Assist in managing food costs, waste control, and inventory for the pastry department.
  • Work with the purchasing team to ensure the procurement of top-tier ingredients while maintaining budgetary goals.
  • Analyze pastry sales and adjust menu offerings based on guest feedback and seasonal demand.
  • Qualifications :

  • Minimum of 3-5 years of experience in pastry leadership roles , preferably in a luxury resort, Michelin-starred restaurant, or high-end hotel
  • Degree or certification in Pastry Arts from a recognized culinary institution is preferred.
  • Strong technical skills in modern and classic pastry techniques, chocolate work, sugar artistry, and plated desserts.
  • Ability to manage high-volume production while maintaining the highest quality standards.
  • Experience leading and training pastry teams in a fine dining or luxury hotel setting.
  • Knowledge of industry trends, flavor pairings, and contemporary plating aesthetics.
  • Proficiency in kitchen management software and inventory control systems.
  • ServSafe or equivalent food safety certification.
