As a Culinary Worker V, you’ll take on a key role in managing high-level food service functions. You will oversee food procurement, menu planning, inventory control, and ensure quality standards are met in all aspects of kitchen operations. You’ll also have the opportunity to lead and mentor a team, guiding them to deliver outstanding meals while maintaining a safe, clean, and efficient kitchen environment.

What You Will Do
- Food Service Management: Lead and manage the preparation of large-scale meals and specialty items, such as baked goods, salads, and desserts.
- Menu Planning & Special Diets: Assist in planning menus, including catering to special dietary needs, ensuring meals meet quality and nutritional standards.
- Supervision & Leadership: Supervise, instruct, and plan the work of kitchen staff, ensuring efficient meal preparation and maintaining high standards of cleanliness and organization.
- Food Procurement & Inventory: Oversee the procurement of food supplies, requisitioning items as needed, and managing inventory to ensure adequate stock for meal preparation.
- Sanitation & Quality Control: Ensure kitchen, storerooms, and refrigerators/freezers are maintained in sanitary conditions. Inspect and approve the quality of finished food and specialty items.
- Cooking & Baking: Cook and prepare a variety of dishes, including meats, vegetables, salads, and desserts. Prepare and bake cakes, pastries, hot breads, and other items as required.
- Reporting & Record-Keeping: Maintain accurate records, prepare reports, and monitor food service activities to ensure operations are running smoothly and efficiently.
Minimum Acceptable Qualifications
- High school diploma or equivalent.
- Three (3) years (36 months) of general work experience in quantity cooking in a commercial setting.
- One (1) year (12 months) of experience comparable to that described in the lower level of this series.
- As required by the position to be filled, possession of the Illinois Department of Public Health, Food Handler Training Certification (from an American National Standards Institute (ANSI) accredited trainer).
- Ability to pass food handler's examination after hire
The Ideal Candidate Will Have:
- Knowledge of materials and methods used to prepare food on a large scale, use and care of relevant utensils and equipment and food values and nutrition.
- Knowledge of current principles and practices of large-scale kitchen management, sanitary procedures and directives.
- Ability to plan menus.
- Ability to supervise and instruct subordinates.
- Actively look for ways to help people.
- Standard mathematics such as addition, subtraction, calculation of fractions, percentages.
- Give full attention to what other people are saying, taking time to understand the points being made, ask questions as appropriate, and not interrupt at inappropriate times.
- Understand written sentences and paragraphs in work related documents.
- Conduct tests and inspections of products, services, or processes to evaluate quality or performance.
