SUMMARY
Performs a variety of duties related to a full-service line kitchen, including accurately and thoroughly reading customer orders, preparing items to specifications and established procedures, maintaining product quality, and efficiently utilizing department labor. Other duties include preparing and restocking various items in coolers/dry storage, prep work, and maintaining food safety and sanitation standards. This position may be required to assist with customer orders and therefore is expected to deliver a friendly attitude that includes acknowledging the customer and creating an environment that encourages repeat business.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Have knowledge of all portion sizes, quality standards, department rules, policies and procedures.
- Ensuring that all orders are prepared quickly, accurately, and according to proper procedures to ensure product quality and consistency.
- Create and manage the schedule, ensuring the proper staff level for business volume.
- Monitor, manage, and maintain assigned labor budget effectively.
- Responsible for the condition, cleanliness, and maintenance of all equipment.
- Maintains open communication with all team members regarding special requests, concerns, upcoming events, etc.
- Maintain proper par levels of all stocked products, proper rotation of all stocked products, and proper maintenance/cleanliness of all storage areas.
- Complete any other assigned tasks and closing checklists.
- Support employee morale by maintaining a healthy, safe and pleasant work environment; resolving any issues as they arise in a timely and professional manner, motivating and building a team
- Supporting the individual growth of each employee to reach their full potential. Know their strengths and weaknesses to be an effective mentor.
- Inspect and maintain product quality, standards and order accuracy, correcting any issues as they may occur.
- Maintain a safe and sanitary work environment, by following established procedures and applicable health code.
- Ensures that weekly cleaning projects are assigned and thoroughly completed
- Follow proper rotation and restocking procedures
- Performs other duties as assigned.
SUPERVISORY RESPONSIBILITIES
Directly manages subordinates in the Dining Kitchen. Responsible for the overall direction, coordination, and evaluation of this unit. Carries out supervisory responsibilities in accordance with the organization's established procedures, policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
EDUCATION and/or EXPERIENCE
College or university program certificate; or two to four years related experience and/or training; or equivalent combination of education and experience. This position requires a well-organized individual that is self-motivated and takes charge, is dependable and responsible, enjoys new opportunities and challenges, enjoys working with and developing people, deals with criticism calmly and effectively, is careful about detail and is thorough in completing tasks as assigned and on time, is flexible and open to change.
COMPUTER SKILLS
Knowledge of and ability to thoroughly and effectively operate phone system, computers, registers and required software.
LANGUAGE SKILLS
Able to read, analyze, and interpret ingredient specifications and recipes, general business periodicals, and or governmental regulations. Able to write and develop creative menu and meal plans, and procedure manuals. Able to effectively present information and respond to questions from customers, staff and owners.
MATHEMATICAL SKILLS
Ability to work with mathematical concepts such as probability and statistical inference, and fundamentals of weights and measures. Ability to apply concepts such as ratios, and proportions for ingredient and nutritional information.
PHYSICAL DEMANDS
While performing the duties of this job, the employee is frequently required to reach with hands and arms; and talk or hear. The employee is required to regularly stand, stoop, kneel and walk. The employee must occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, color vision, and ability to adjust focus.
WORK ENVIRONMENT
The noise level in the work environment is usually quiet. The work environment is quick paced in close quarters. Exposure to heat from ovens, grill and burners is frequent. Exposure to cool temperatures from coolers/freezers is occasional.
