Core Job Functions
- Assigns weekly, all cleaning needs inside production areas to include cleaning ovens, all stainless steal, breakdown of charbroiled and fryers and ceiling grids over production areas.
- Insures food items are prepared in a manner to prevent cross contamination. Make sure all production staff are in proper uniform and that all food is prepped properly.
- Production needs are planned and coordinated with production staff to insure proper execution of diets and menu items. Menu substitutions are made as required. Catering food is coordinated.
- Trains cooks, plans menus prep lists and holds a daily line up meeting with production staff to assign stations and prep list duties. Manages and adheres to Health Department standards and holds co-workers accountable for any violations of the regulations for Serve Safe Standards.
- Ensures adherence to departmental and health system policies and procedures through co-worker training, performance evaluation and quality monitoring documentation. Coordinates and schedules co-workers to meet service requirements. Communicates attendance and/or behavior issues to appropriate managers/timekeeper.
