Food Service Foreman

• Supervision of approximately 16 inmates in all aspects of preparation and serving nutritious, well-balanced meals for approximately 115 inmates in a secure institutional setting.
• Train inmates in the art of food preparation, cooking, sanitation, personal hygiene, safety, and the correct use of institutional kitchen equipment in accordance with the State of Alaska, Department of Environmental Conservation Food Code, including preparation of special diets such as: vegetarian, low cholesterol/low fat, diabetic, food allergy, finger food, and other medically prescribed diets.
• Monitors and records total meals served, cost analysis reports; ensures food service operation is cost effective and within budget.
• Directs and/or receives, checks, stores, distributes and tracks facility food service inventory. Ensures on-going training of kitchen staff.
