- This is an anticipated vacancy**
- Works with the Food and Nutrition management team and manages all areas of food production and delivery working through supervisors to ensure prompt, efficient, safe, and high-quality nutritious meals and snacks for the people who live here. Also coordinates production needs for providing campus caterings for recreation meals, special events, etc.
- Maintains and evaluates records for truck maintenance, food production/delivery, taste panel, sanitation, staff training and evaluations, timekeeping, daily reports, leftovers, etc. and communicates with management team possible system changes needed based on reports (e.g. recipes changes to prevent over/under production or to improve quality of product).
- Establishes work standards and interprets work procedures to staff while meeting regularly with employees in the production area to relay information and interpret policies and procedures as necessary. Approves/denies leave and completes coaching, counseling and disciplinary actions with subordinates as needed.
- Monitors safety/security of the Main Kitchen equipment, supplies, building, and grounds placing work orders or communicating recommendations for repairs or replacements to the Food Service Director.
- Follows all requirements of governing bodies (e.g. School Nutrition, USDA, local health department, ICF, OSHA, DHHS, doctor ordered diet requirements, IDDSI, Nutrition Care Manual, etc.)

- exercise good judgment and initiative while following and maintaining established work procedures and record keeping
- effectively communicate and direct others (knowledge of principles of personnel management).
- ability to plan and manage food production activities to fulfill menu requirements while maintaining high standards of food safety and sanitation.
- knowledge and understanding of therapeutic diets and menus.
- knowledge of methods of quantity food preparation utilizing commercial equipment, cooking times, and temperature requirements of various foods.
