THE JOBCarry out all duties related to the microbiological program including plant hygiene and propagating yeast. Additional cross training will include other quality assurance analytical methods.
THE BASICS
  • Perform standardized microbiological testing on all beer and beer ingredients including raw materials and contact surfaces in all areas of production.
  • Prepare various types of culture media such as WLN, LMDA, LCSM, TSA, etc.
  • Read, analyze, and interpret culture plates.
  • Perform polymerase chain reactions utilizing Applied Biosystems, QuantStudio, 5 Real-Time PCR System and r-Biopharm PCR kits.
  • Manage the brewer’s yeast program by maintaining several yeast cultures and propagating yeast from a singular colony up to several liters of yeast slurry for use in production brewing.
  • Monitor ATP swab data and generate routine reports to aide in root cause analysis.
  • Train operators to perform proper aseptic technique and various sampling tasks.
  • Take a lead role in determining the root cause and viable solutions of microbial contamination in the brewery.
  • Preside over regular microbiological meetings to present data and root cause analysis to the management team.
  • Stay current on new techniques, technology, and microbiological findings by utilizing resources such as the Brewers Association, Master Brewers Association of the Americas, American Society of Brewing Chemists, VLB, and other professional publications.
  • Write experimental designs, proposals, presentations, and research papers. Present at industry conferences, where applicable.
  • Perform autoclaving and decontamination of the laboratory.

Required Experience:


WHAT YOU NEED

  • Education: Bachelor’s degree in Microbiology, Biology, Molecular Biology, Food Science or related field. A master’s degree or higher is preferred.
  • Experience: At least 5 years of related experience and/or training; or equivalent combination of experience and education. Brewery or food manufacturing experience is a plus. You must have experience with Good Laboratory Practices.
  • Certificates, Licenses, Registrations: cGMP, HACCP, SQF, or brewing certificate is a plus.
  • Language Skills: Must be able to effectively communicate in English, both verbally and written.
  • Travel Requirements: occasional travel required to other Stone locations and industry events.
  • Computer Skills: Proficiency with Microsoft Office applications (Word, Excel, Outlook).
