What are the responsibilities and job description for the Head Baker position at Sullivan Street Bakery?
Sullivan St. Bakery is seeking a Head Baker to join our Team! We are a Roman-inspired bakery specializing in rustic sourdough loaves. We operate 2 retail bakery cafes in Manhattan, and deliver wholesale baked goods to 300 restaurants, hotels, cafes and catering companies in the area. The ideal candidate will work closely with the Pastry Chef to own the bakery production process from recipe development and management of supplies, through production list, execution of production list, and quality control. You will strategize and plan with the wholesale team, retail team and take leadership of the entire production process. We are a 7-days a week 24 hours a day so your work hours must be flexible. Plan and meet daily production goals, while tracking efficiency, training bakers and identifying areas of improvement are key components for your success in this position. The ideal candidate is very experienced in high volume production of un-refrigerated sourdoughs.
Responsibilities:
- Manage and evaluate entire production process from support the planning of production, including but not limited to recipe development, development of processes and procedures, and training supervisors and hourly bakers to ensure all client orders are fulfilled to our quality standards
- Collect data on quality, yield, labor input, climate control, waste, and other relevant metrics for improving efficiency and reducing costs in order to develop, improve and implement processes
- Tracking inventory and ordering for all production supplies
- Contribute to budgeting
- Ensure quality and cleanliness metrics are always kept to maintain a safe and sanitary production environment
- Team Management, Scheduling, Training and Development
- Develop and manage staff scheduling and daily tasking; serve as the first line of defense in troubleshooting production issues and resolve staff conflicts if they arise
Requirements & Qualifications:
- Prior experience in Sourdough Bread Baking production is required
- Prior management experience to include training, staffing and personnel management is also required
- Strong organizational and managerial skills as well as sound computer skills such as creating and managing worksheets and planning schedules is critical
- Demonstrate excellent communication skills (written and verbal)
- Open availability, including weekends, holidays, early mornings and overnight is a MUST
- Ability to work in a fast-paced environment with a high level of attention to detail.
- Ability to follow procedures and take directions, work as a team player.
- Ability to work flexible hours, including evenings, weekends, and holidays.
- Ability to lift and carry up to 50 lbs.
- Constant standing, walking, bending, reaching, and repetitive motions.
Salary : $85,000 - $100,000
