Cafeteria Manager
Swain Middle School
10 Month Position
Reports to: Child Nutrition Director
Supervises: Child Nutrition staff at school site
PURPOSE
Coordinate, implement and monitor the production and serving of school meals to ensure federal and state regulations are met, including but not limited to management of food preparation and serving operation by following planned menus, standardized recipes, and production records. Coordinate staff to ensure the operations are run accordingly.
ESSENTIAL JOB FUNCTIONS
- Manage food preparation and serving operations
- Prepare food according to planned menus and uniform recipes
- Determines quantity and type of food to prepare
- Determines size of servings to meet age level requirements
- Observes food preparation
- Procures, stores, and inventories food and equipment
- Maintains high standards of safety and sanitation in work environment
- Supervises the child nutrition staff.
- Handles daily cafeteria cash transactions.
- Prepares child nutrition records and reports.
KNOWLEDGE, SKILLS, AND ABILITIES
- Knowledge of basic mathematics and measuring conversions
- Ability to follow standardized recipes, federal & state regulations and HACCP procedures
- Software/word processing skills to operate cafeteria point of sale computers; to complete required daily, monthly and yearly reports; to maintain inventory and to enter/update student roster information.
- Coordinating skills to maintain daily records such as balance of closing register, bank deposits, food usage, food production sheets and to organize/assign work tasks to child nutrition employees.
- Administrative skills such as monitoring financial data daily; interpreting policies and procedures to ensure the program is run according to federal guidelines.
- Analytical skills to assure food supplies and equipment are adequate; maintain up-to-date inventory.
- Communication skills to communicate effectively with staff, students and parents; interviewing potential child nutrition workers; provide training to child nutrition staff.
- Leadership skills such as motivating and setting goals for the school year and to conduct monthly staff meetings.
- Mechanical skills to maintain kitchen equipment and to train staff in correct use of equipment.

QUALIFICATIONS
- High school diploma or GED
- Minimum 3 years experience in food service with at least 1 year in management OR minimum of 5 years experience with institutional food service.
