Swamp Rabbit Cafe and Grocery is a showcase for local farmers and food artisans. We buy from over 300 local producers to provide the community with a convenient and fun connection to those producers. The Swamp Cafe is a fun and fast paced environment focused on serving delicious food with fresh seasonal and local ingredients. The Food Production Manager is responsible for the daily operations of the Line Cook and Prep Cook branches of the Cafe. The major accountability of the Food Production Manager is to continuously focus on meeting and exceeding guests’ expectations with exceptional food and service as a primary goal while keeping up the employee morale, work ethic and overall cleanliness of the Cafe; as well as continuing to help the Cafe be profitable through regulating product usage, waste, and employee labor.
ESSENTIAL JOB FUNCTIONS
- Manages team of Line Cooks and Prep Cooks within our high volume Cafe department
- Works in tandem with Cafe Manager to ensure the overall Cafe department is running optimally
- Holds all team members accountable to standards related to quality, consistency, food safety, speed/efficiency and menu knowledge; develops and coaches staff if/when performance issues of any sort arise
- Responsible for managing department retention through sound hiring, training, performance coaching and the delivery of formal performance reviews
- Contributes to overall profitability of the Cafe by properly managing labor, COGS, inventory, food quality and team member success
- Actively manages the floor when needed in order to proactively manage busy times, redirect staff to the most important tasks and have a general pulse on production and staff efficiency
- Responsible for the effective training of all new hires; conducts various trainings to ensure consistency, accuracy and understanding of all job functions
- Maintains accurate training manuals and documentation and creates new resources as needed
- Creates and maintains standards relating to production/wait times on made to order food; utilizes reports to track and improve wait time standards
- Writes effective schedules in adherence to labor budget and service standards. Manages labor through timesheets audits and approving/denying time off requests from staff
- Creates daily & weekly workflows & prep/production lists aligned to sales forecasts & data to promote minimized loss and optimized sales
- Places various weekly orders and holds inventories to ensure appropriate product levels while minimizing loss
- Is responsible for troubleshooting consistency or quality issues; takes full ownership of reducing waste by limiting production mistakes
- Monitors and maintains appropriate inventory levels to maximize sales, optimize freshness, minimize excessive inventory, and reduce shrink
- Performs daily walk throughs to ensure proper FIFOing, identify maintenance or equipment needs and proper sanitation throughout department
- Ensures all product leaving the Cafe is up to our standards by doing visual checks, tastings, and training staff to self identify issues
- Responsible for increasing sales through proper management of inventory levels, production time and product quality
- Responsible for continuous improvement of the Cafe department; recommends process, layout and/or system changes to keep up with constant growth
- Ensures department is properly prepared to handle large volume of customer traffic; recognizes and trains team to anticipate and properly prepare and react to order volume
- Builds upon existing measurement tools for tracking ticket time and guest satisfaction in efforts to improve the overall efficiency of the Cafe department
- Maintains constant awareness of ticket times and product quality. Promptly intervenes to correct issues before they affect the customer experience
- Works with Cafe ,Kitchen and Grocery management to ensure seamless collaboration and communication across departments; proactively approaches other members of management to solve anticipated issues and/or improve current processes
- Actively develops assistant managers and leads in efforts to build a robust, skilled management team
- Works to continuously train and develop Assistant Managers and Leads in support of their career goals
- Works with Kitchen General Manager to collaborate on new menu items; manages new menu roll out processes
- Attends and hosts various manager meetings to communicate and discuss priorities and issues. Communicates regularly with other managers regarding needs, successes, and customer input
- Creates systems and processes to best serve customers, promote order accuracy and increase repeat business
- Operates a variety of specialized food service equipment
- Oversees catering fulfillment of relevant Cafe items
- Responsible for maintaining food safety in all assigned areas
- Complies to and ensures compliance of all related food safety, health & sanitation regulations, workplace safety, and weights and measures according to SCDHEC, other applicable laws and company policies and regulations as necessary.
- Finds efficient use for downtime (cleaning, restocking, dishes, etc)
- Assists fellow employees as needed
JOB REQUIREMENTS
- Must be 21 years of age or older
- Must have 3 years of food management experience in a high volume setting
- Is an active part of the Swamp Team so adheres to high standards of service, quality, and presentation and displays the Swamp Core Values
- Must have a good working knowledge of Google Suite (Drive, Sheets, Docs) and Microsoft Excel and be willing to learn and use the Entrepreneurial Operating System
- Must have a valid driver’s license and meet the requirements of the Swamp driving policy
- Must communicate through company designated platforms including, but not limited to Slack, Paylocity, and email
- Is an active part of the Swamp Team so adheres to high standards of service, quality, and presentation
- Take initiative to help any area of the business if possible
