Food Truck & Kitchen Manager

JOB SUMMARY

The Food Truck/Kitchen Manager Serves as the person in charge of the food truck and in house food offerings. Also responsible for creating and administering a food truck model that can be flexible enough to adapt to changing circumstances (such as a pandemic) and accommodating to the needs of those that we serve. This position requires exceptional leadership, strong business acumen and experience in food service or hospitality operations. The Kitchen Manager will assist in developing a business plan, set projections and goals, monitor, analyze, and report on results. They will drive sales, make staff decisions, manage labor, overhead and food costs. They must have a clear understanding of the food service industry. They must also have a strong desire and proven ability to coach and develop crew members, ensuring an exceptional customer experience.

ESSENTIAL FUNCTIONS

1. Must have a thorough knowledge and understanding all aspects of kitchen operations and the ability to train in all areas.

2. Schedule employees for food preparation, service, and cleaning according to needs.

3. Collaborate with Retail Manager to create a strong and effective working relationship with the front of house to ensure smooth operations between the kitchen and the retail teams.

4. Ability to manage kitchen operations independently and cover entire shifts as needed.

5. Prepare or directly supervise kitchen staff responsible for the daily preparation of soups, sauces, menu items and "specials" to ensure that methods of cooking, garnishing, and portion sizes are as prescribed by standardized recipes.

6. Complete monthly inventories, pricing, cost controls, requisitioning, and issuing for food production

7. Supervise and train Team Members on sanitation and safety, menu planning, and related production activities

8. Consistently maintain standards of quality, cost, eye appeal, and flavor of foods

9. Establish controls to minimize food and supply waste and theft

10. Must be able to travel to and work during the busiest time on a daily and weekly basis including days, evenings, nights, weekends, holidays.

11. Builds bench strength for the organization by helping to cross-train team members.

  • Ensure proper staffing for maximum productivity and high standards of quality; control food and payroll costs to achieve maximum profitability. Hire, supervise, train, and evaluate kitchen team members

13. Regularly conducts job assessment, performance reviews and continual feedback.

14. Provides coaching and direction to act and to achieve operational goals.

15. Assist in the development of training and the provision of professional development opportunities for all kitchen staff

16. Consult with retail personnel during daily meetings

17. An energetic personality who enjoys the food service environment, has a passion for cooking and creating a fun and exciting environment for everyone.

  • Assist in food procurement, delivery, storage, and issuing of food items
  • Expedite food orders during peak service hours
  • Inspect presentation of food items to ensure that quality standards are met
  • Report all guest or employee complaints to the Director and assist in resolutions

22. Plans, identifies, communicates, and delegates appropriate responsibilities and practices to ensure smooth flow of operations.

23. Online operations – Partner with the Retail Manager to manage online ordering website and ensure orders are fulfilled in a timely fashion.

24. Maintains ServSafe certification.

PHYSICAL REQUIREMENTS/WORK ENVIRONMENT

1. Must be able to occasionally lift 50 pounds

2. Must be able to stand for long periods of time in a kitchen environment

3. Must be able to use food preparation utensils and machines, including industrial ovens, grills, stoves, slivers and grinders and other commercial kitchen equipment.

4. Must reside locally or be willing to relocate to the area

EDUCATION AND EXPERIENCE

1. Must have leadership experience

2. Previous kitchen management experience

3. Proven track record of relevant accomplishments

4. Proficient in Microsoft tools such as Outlook, Excel and Word

5. Previous food service experience preferred

6. College degree preferred

Job Type: Full-time

Pay: From $50,000.00 per year
